These Peanut Butter Cookies with Turbinado Sugar aren't too unhealthy.
And they're pretty tasty to boot.

Here's a healthy cookie recipe. My boys (I have a 13 y.o. and an 11 y.o.) LOVE these. They're vegan, meaning they don't have any animal products at all.
Yummy Vegan Snack Cookies
Ingredients: 2 cups whole wheat flour 3/4 cup raisins 1 tsp cinnamon 1/2 tsp baking soda 1 cup soymilk 1/3 cup oil 1/2 cup molasses (you can use honey if you use animal products) 1 teaspoon vanilla
Directions: Preheat oven to 400 degrees. Mix the wet ingredients. In a separate bowl mix the dry ingredients. Mix it all together.
Drop cookie size tablespoonfuls onto oiled cookie sheet. Bake for approximately 20 minutes.
Note: Great with vegan jams, jellies spread on top as icing.
Variation: Try replacing 1-1/2 cups flour with 1-1/2 cups bran if you wish.

I'll have to try those vegan cookies, thanks littlebirdie. Oatmeal cookie recipes can be tweaked a bit for something more healthy too. edit: dyslexia acting up today

My practice is to "tune up" regular cookie recipes with the following substitutions:
for butter, substitute Earth Balance spread or 1/2 spread & 1/2 almond butter
for sugar, substitute xylitol
for white flour, substitute 3/4 whole wheat & 1/4 flax meal
for regular chocolate chips, substitute Sunspire (no sugar) chocolate chips
**When subbing Earth balance for butter, I use a little more baking soda than the recipe calls for, as Earth Balance melts more quickly. This keeps the cookies from flattening out excessively, and makes them chewy rather than hard when they cool off.
**Tollhouse cookies made with 1/2 Earth Balance & 1/2 almond butter, plus Sunspire chips rather than sugary choco chips, are DELICIOUS!

Umm... fig newtons really aren't all that healthy. Just listen to your body. I hate it when people make life harder than it is. Eat a cookie if you feel like having one. Just make sure you use the energy you put in.

check into recipes with carob instead of chocolate (taste very similar)
also, brownies can be made with carob powder and whole wheat flour

Not cookies, but desert none the less. It's great banana bread, using apple sauce instead shortening or butter. I'm sure you could find alternatives for the sugar and white flour as well to make it even more healthy.
I made this last night and it's great. Only .5g of fat per slice.
