so I'm interested in makin some welches concentrate wine

So I'm a pretty big drinker but not much of a wino. I like sweet wine and everyone looks at me like I'm a jackass when I ask for it. I've found small winery near lake eerie that has a delecious very sweet concord grape wine but I don't make it up that way very often so I was ineterested in possibly brewing my own.

Are all the carboys and other brewing aparatus necessary if all I'm gonna do is a welches concentrate brew, or is there a cheapo route I take? I've never brewed anything before so this is all new territory for me.

Any info would be greatly appreciated.

um.. we did our first brew in a 6 gallon bucket with a co2 release thing on the top and our brew was 6 gallons of water, 10 lbs of sugar, 4 containers of red kool-aid mix and a packet of bread yeast.

it was the best bitch beer i've ever had

I left my Welches grape juice sit right in the bottle. I didn't have to add a thing. Just release the gas build up or it will pop. In a week it was carbonated like a champagne.

Well I spurred the discussion in that thread the other day so I deserve some credit...good luck. :wink:
If you're going purely for the amount of alcohol  you could try using a bunch of sugar and a turbo yeast to get it really strong.

I have made something similar with grape juice and it fermented out very dry. You said you wanted a sweet wine so I would set aside some of the concentrate to back sweeten it if yours turns out dry as well. Otherwise your yeast may ferment all of the sugar to dryness.

i tried making straight sugar alcohol one time...... it was disgusting. lol. strong as hell, but doesnt taste good. i guess no worse than cheap vodka though.... :smile:

it usually takes a new wine brewer several batches to find a taste that he/she likes. you just have to keep tweaking the mixture amounts.

i just cracked open a 2 year old organic blueberry wine i made. man, there is no alcohol better than home brewed wine. this shit is awesome. very strong(one glass has me good and buzzed) slightly dry, faint carbonation, strong blueberry flavor, beautiful maroon color. its a shame that was the only bottle of the blueberry i made back then. now i have to make some and wait two more years for more!

Yeah, I know what you mean. I started mead making earlier this year and have been making small one gallon batches at a time. (Just in case I screwed up I wouldn't have wasted so much). But the drawback is so few bottles! I have already gone through half a gallon of elderberry mead but I added oak cubes to it and will let it age a few more months before bottling.

The blueberry sounds good- did you add all the berries at one time to the primary or save some for the secondary?

man..... i love pure honey mead. that shit is the bomb. elixer of the gods they say......

yeah, i wish i could mail all of you a tester.... but thats alot of work and im sure it breaks some laws lol.....

and the blueberries were all added to the primary.

What type of yeast is best for making mead? I have turbo yeast and wouldnt mind getting either wine yeast or baking yeast if either are prefered.

Depends upon what ingredients are in your mead.

Bread yeast is almost never used (although I do have one quick mead recipe using oranges which is designed specifically for bread yeast). This was actually my first mead which I selected because it was a simple recipe and foolproof for a beginner plus it was ready in only a couple of months.

Wine yeasts work well with mead since mead is very similar to wine. I have used Montrachet, Pasteur Red and Pasteur Champagne. Montrachet and Red are good for fruity reds and champagne for dry, higher alcohol meads.

Well id like to make a mead with alot of raspberries and some "Raspberry Zinger" tea (my favorite type of tea), citric acid (i have a big bottle laying around, have nothing better to do with it) and of course honey, water, and possibly sugar (i want it to come out somewhat sweet and also carbinated)

Does that sound like a decent idea for a recipe? I'm not a big fan of being able to taste the yeast used in the long run in the final product so do you have any suggestions? I am willing to hunt down any yeast needed (i dont like to take shortcuts). (i do like talking in parenthethes though)

I quickly looked through that website. would "WLP720 Sweet Mead/Wine" yeast be a good choice then?
