Your favorite batter recipe?
    #7594846 -

How do you make your batter, and how do you like it?

I fried some chicken the other day, and made a simple batter.
1/2 cup flour
1 egg
1/2 milk
Tapatio hot sauce
Garlic powder
Chili powder

Next time I'll make it a little spicier but it turned out well. I think next time I'll use less milk so the batter isn't so thin. I think that might help it stay on the chicken better and get that thick crunchy YUMM!

I like a good spiced tempura batter, equal parts rice flour and sifted regular flour, with a dash of paprika and chili powder. Great with traditional tempura vegetables, or even leafy materials... Endive, Basil, Leeks...
