my pad thai recipe

16 oz rice noodles
4 tbsp sesame oil
3 tsp minced garlic
cup of chopped onions
1 stalk of lemongrass, crushed
1/2 cup of shrimp, drained
6 thai red chili peppers, minced
1 tbsp brown sugar
3 tbsp fish sauce
4 tbsp ketchup
3/4 tsp black pepper
2 eggs, beaten lightly
6 cups bean sprouts
1/4 cup cilantro
1/4 cup peanuts
3 tbsp garlic-chile paste

cook noodles until soft, then drain, cool with cold water, then drain again. stir-fry oil, onion and garlic . then add shrimp, lemongrass and chiles and cook until shrimp are done.

add everything else and cook until eggs are set.

garnish w/ cilantro

i have my pad thai recipe posted somewhere within this forum...

your recipe doesn't seem to have any tamarind paste in it...is that substituted by the ketchup?

I dont really like the taste of the tamarind paste.  :frown:  But I think the ketchup gives it the extra flavor and little bit of sweetness that it needs...

satay sauce...

usually you can buy satay sauce where you just add water or milk to it is already good enough in my opinion...

but here's a recipe i found on the net...whcih is pretty much close to the authentic way that the indonesians make it

RECIPE INGREDIENTS

3 inch piece lemongrass cut from base or 1 teaspoon grated lemon rind
1 tablespoon oil
1 medium-sized brown onion, grated
2 cloves garlic, crushed
2 teaspoon grated fresh ginger root
1/4 teaspoon chili powder or to taste
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1 cup canned coconut milk
1 cup crunchy peanut butter
2 tablespoons soy sauce
1 tablespoons lemon juice
3 teaspoons brown sugar


If using lemon grass, slice thinly, then pound to a paste with a pestle. Heat oil in a saucepan, add onion, garlic, ginger and lemon grass or grated lemon rind and fry gently for 4-5 minutes. Add spices and cook gently for 1-2 minutes. Stir in coconut milk, bring slowly to the boil, then add remaining ingredients. Stir until smooth, simmer gently for 1 minute and remove from heat. If not required immediately, sauce will store in a sealed jar in the refrigerator for up to 2 weeks. Use as a sauce for beef, chicken or pork satays, or as directed in recipes; thin down with coconut milk or water to use as a marinade and baste.

found my recipe in the archives

Ingredients
300-400 grams chantaboon rice noodles (you can find this at an oriental store. soak the noodles for about 45mins to 1hr in water at room temperature)
6 cloves of garlic, minced
?-1 full shallot, minced
300 grams diced chicken
1/4th cup chives, minced
2 teaspoons tamarind concentrate (add 5 teaspoons water to this)
1/4th cup sugar (palm sugar is best - if you can find it)
1/4th cup patis a.k.a. fish sauce
? cup grounded roasted peanuts
1 cup mung bean sprouts
1 egg, beaten
? cup of firm tofu cut into small squares (optional)
some cooking oil

- in a small bowl, mix the tamarind concentrate/water, patis, sugar. Set aside.
- heat some oil in a wok. add the minced garlic and shallots and fry just before it gets browned.
- add diced chicken. cook till the chicken is done.
- add chopped chives and grounded peanuts. mix well.
- add the rice noodles and keep stiring everything around.
- add the patis/sugar/tamarind mixture to the wok. stir around so all the noodles get "coated" by this sauce.
- push the noodles to the side of the wok and add the beaten egg. scramble the eggs till they're done and mix into the noodles.


try it....you hardly taste the tamarind at all and it's pretty much close to the authentic way of cooking it (you can add prawns as well and substitute peanuts with cashews...adds a bit more sweetness)
