Anyone know any good thai recipes? I'm in the mood for thai but there are no restaurants that I know of around here and I feel like cooking anyway

Got a Tader joes near you?
I love their sauces. Pad-Thai sauce from Trader Joes kicks ass..
Just take lean pork or chicken, LOTS of vegetables. Spaghetti noodles.
Saute the chicken, add the vegetables and stir fry with some soy and oyster sauce. Add the noodles and pour on the sauce and toss in the hot pan for a minute and serve...
The sauces from Trader Joes do all the work for you.

my pad thai recipe...very easy, i always make it (like every week)
500grams chopped chicken breats 2 shallots minced 5 garlic cloves minced 1/4th cup fish sauce 1/4th cup sugar or palm sugar 1/4th cup chopped chives 1/2 cup grounded peanuts (or cashews..makes it taste better imo) 1 tablespoon tamarind extract + 5 tablespoons water 1 egg medium sized chataboon rice noodles about 300grams
soak the rice noodles in lukewarm water for about 30 mins or until soft in a seperate bowl combine the tamarind extract dilluted in water + sugar + fish sauce
in a wok, heat up oil and add minced shallots and garlic. cook until the garlic turns light brown. add the chicken into the wok and cook until juices run clear (or otherwise when it's already cooked) then add the tamarind/fishsauce/sugar sauce and combine. add the chopped chives and the peanuts or cashews...mix together throughly then add the noodles. keep turning hte noodles around to make sure it throughly gets cooked and is coated with the sauce. shove all the noodles and other stuff to the side of hte wok and crack and egg. scramble the egg up and then mix in with the noodles
there u go yummy
