I want to rast a fucking chicken

What should I stuff that bird with I am asking. Help me out here

Get a beer holder thingy, that you put a beer cup in and the chicken goes over top and it gives it a beer flavor.

INGREDIENTS:

* 1 onion and 2 stalks celery, chopped
* 1/2 cube butter or margarine
* Poultry seasoning, salt and pepper
* 1 cup chicken bouillon or giblet broth
* One bag croutons

PREPARATION:
Saute onion and celery in butter or margarine until tender. Add one bag croutons (seasoned or plain), mix and heat. Add chicken bouillon to moisten well. Season to taste. Makes enough for a small turkey; you can double the ingredients for a larger (15 lbs or more) turkey. I add chopped giblets for more flavor.

I go heavy on the butter ;] and this is good without the chicken too.

Stuff it with just fresh herbs and a lemon cut in half, season liberally inside and out with s and p, rub softened butter underneath the loosened skin of the breast and roast at 400F until the leg moves very easily and juices run clear.

Stuffing just makes the bird cook longer not get as crispy and also invites salmonella if not rasted immediately.

Herbs I like are thyme, sage, rosemary and tarragon or a mix of all four.

Yeah, that sounds good. I'll probably throw a bunch of garlic in there as well.

When its done, you could turn the stuffing into a puree when its done.

mmmmm...


one thing i realize with roasting chicken...the more butter, the better.


This is reminiscent of Elia's Roasted Chicken recipe on Season 2 Top Chef where she just pastes the entire chicken in a later of butter before throwing it into the oven.

senor, I like to keep it simple with roasted chickens, usually i'll stuff the innards with a frsh clove of garlic cut in half and just stuff in ther ewhole, then I'll take a lemon cut it in half squeeze some of that juice in a cup with some delicious olive oil, and put the lemons in the innards with the garlic. Then make a rub, using some dried garlic, salts, some kinds of peppers depending on taste; cayene, paprika, black/white peppers..etc.. use some basil and other herbs as well. then rub it down real well. get the oven hot at about 300•, put it in for 30 minutes rotate and another 30.
