sesame chicken??
    #3101047 - 09/06/04 11:45 PM (12 years, 3 months ago)

I love sesame chicken from chinese restaurants... but when I do a search for sesame chicken recipes I get recipes that don't even sound anything close to what I get at the restaurants...

restaurant sesame chicken has a breading and is in sauce... all the recipes I find are like baking chicken in honey and sesame seeds.

anyone know how to make it or know any websites that have a recipe for it?

cut up 1 pound of boneless skinless chicken into 1 inch pieces. beat 3 eggs into 1/2 cup of cornstarch. add vegtable oil to make consistancy proper, if needed. toss the chicken in the cornstarch mix.

in a different bowl, mix up 2 teaspoons of cornstarch, with 2 tablespoons rice wine, 1 1/2 tablespoons rice vinegar, 3 tablespoons of sugar, and 3 or so tablespoons of soy sauce. make sure you disolve as much sugar as you can. this is your sauce, sorta, sometimes i make a double batch of this cause i love the taste...

heat up peanut oil in a wok to around 350 or 400 degrees, or untill when you stick the handle of a wooden spoon in, tiny bubbles come up very quickly. fry the chicken in this just long enough to cook it, dont put too much chicken in at once, or it will cool the oil down and the chicken wont cook up right. let the chicken drain on some paper towels on a plate.

once your done frying all of the chicken up, set it aside for untill your ready to eat. then put a 2 tablespoons of peanut oil in the wok, heat it up. smash 2 to 5 dried peppers of your choice (chili pods for spicier, ancho for a smokier better flavor....i use 2 full size ancho chillies and 1 red chili pod) smash/chop these up into fairly small peices, id say less than a half inch for the ancho's and very fine chop for the red chili pods. toss this in the oil in the wok, and let cook for a minute or two so the oil can really suck up all the flavor.

chuck all the chicken in with the the peppers and oil, until they start to brown a little bit more on the outside, like crispy brown but not overcooked...just real quick like.

now the fun part, pour in the sauce you made earlier, and toss the chicken and peppers with it over high heat, untill the sugar in the sauce carmelizes allllll over your chicken. add pre steamed brocoli, that is warm still, and sprinkle with sesame seeds.

serve immediatly with rice.

best...sesame...chicken....ever.

i hope you learn to love this as much as i do, its very easy recipe and you can eat it allllll the time.

I worked in a chinese restaurant over the summer. They had a easy recipe for sesame chicken. Take chicken breast and cut them into long 1/2-3/4 inch strips. I think the chicken was just marinated with a little salt and baking soda. Then get a ton of untoasted sesame seeds and dump it on the chicken. Mix thoroughly. when I mix I usually pick it up and throw it back into the bowl to really pound the sesame into the meat. Then get a wok with lots of oil, and drop them in 1 by 1 to prevent sticky and fry until golden brown. Take out of the oil and let it strain. The actual sauce is just ketchup, sugar, and soy sauce. Reheat the wok with a little oil, put it some garlic, sambal(the hot ground chili's in oil), and the sauce, toss the chicken in and coat.

I can't stress how good this recipe is. It had to be bumped again for the greater good of hungry people.
