Extensive cold-shocking - 13 days?

I'm leaving for 13 days. and have casings colonising their verm layer in the incubator. In 2 days, mycelium should be poking through.

Can I put them in a bag and leave them in my fridge for 13 days? Are they going to be ok during such a long period of time?

Id refrigerate to keep the mycelium from eating at the nutrients. cold shocking it won't hurt it. i've heard of jars and casings keeping good for up to three months with no noticeable change.
