Generally (in my understanding) hydrolysis rxn's do not proceed very quickly without acid or base catalysis. Perhaps there is some citric acid (ie. 'lime-flavour') that causes the hydrolysis of something like an acetal (just a guess)??

i believe that it isnt alchohol to start with.... when they break the chemical bond it turns into a different chemical which will turn back into ethonal once it is introduced to water... because the water bonds with the other chemical........ it depends if it has valence electrons
