Two important questions...Need answers *fast*...

(1) Do I tighten the lids on the jars completely when I put them in the PC? Or do I leave them somewhat loose?
(2) Do I need to cover up the vent-hole thing in the top of the pressure cooker while it's cooling down? I read something about air coming in the PC as it cools, and that I need to prevent that...Is that correct?

I always leave the jar lids screwed on just enought so that the lid will stay attached if I lift up the jar by the lid. As for your second questions, I never use a pressure cooker, I'm a boiler. Leave the lids somewhat loose so that the steam can penetrate into the jar. However, a pressure cooker is under pressure, of course and should force the steam into the jars alot better then the boiling procedure I use.

1. as said above, plus you can/should put a square of tin foil on top of the jar so that there be less air movement around the lid.
2. No, it is not correct. Let it cool down anywhere or put your PC in cold water (your bath tub, for example) so that it cools down completely in only 3 hours.

Please do not do this!!!!!!!!! Putting a hot pressure cooker in cold water is extremely dangerous!

I don't know if you're right (I've seen cooking instructions advise that kind of cooling). I never threw my pressure cooker in cold water while still under pressure, though. I let the steam get out or let it cool down gently so that the pressure comes down to the moment you can open the lid. Then I put it in water.... (although I do NOT open the lid!)

It is a bad idea to let the steam out quickly from a canner (Experiance from canning green beans and corn) The contents can boil over when you do this, and in your case will ruin your water content in the substrate. Patience is what you need =)

Pleas make sure you DONT open the PC before all the pressure is gone! My friend took it off the stove and opened it right away, he was in the hospital with 2nd dergee steam burns:(

You?re right,for certain dishes, but don?t do it when preparing jars.

1) Loose and cover with foil
2)The volume of air in the pressure cooker will decrease as it cools, thus sucking in outside air to maintain it's capacity. This is unavoidable and plugging the hole will only lead to a greater vacuum being created for when either opening the pc or unplugging it (that is if the plug isn't already sucked into it). If worried about contams due to this, just leave the regulator on and leave at room temperature to allow a slow natural cooling. As an added precaution you could drape a clean cloth overtop and keep in a semi-sterile to sterile environment. I could see placing an easily-breathable filter over the pressure release not posing much problem but never plug it.
