Lactarius and Russula toxicity
    #6872071 -

I have two questions that I hope someone here can help answer:

1. Are there any toxic species of Lactarius that it is known cannot be detoxified by the Russian method of soaking in several changes of water, boiling and salting?

2. Are any russulas known to be toxic other than R. emetica?

By toxic I mean toxic, as in eating them will make you sick. I do not mean that it might make some people sick, or that we don't know if it's toxic or not so we will assume that it is.

I'm really interested in finding out what actually is known about Lactarius and Russula toxicity. I'm growing increasingly frustrated with the lack of good toxicological information about mushrooms other than the really deadly ones. Field guides are particularly bad about this. Most of these appear to be written by people with very limited palates who feel free to mix their own subjective opinions about taste with objective toxicological information when making judgments about "edibility." Detoxified and salted Lactarius are definitely worth the trouble, and some of the russulas have a peppery flavor that would work well in salads.

I'm new here. I've checked the archives and can't find that these particular questions have come up before. I apologize in advance if I'm wrong about that.

As far as I know, there is only one "toxin" found in Lactarius species. It is very hot tasting and causes an upset stomach by due to irritation.

I asked David Arora this same question a few months ago. He said that there are two possible toxins in Russula - Most have the same toxin as Lactarius, which can be deactivated bu pickling. The other toxin is not hot, causes an upset stomach, and is found in Russula species that stain brown on the stem and typically fruit early in the season. He said that as far as he knows, the rest are safe to eat. here is an example of one of the bruising Russula's.

Wikipedia says that Russula emetica is dried and used in powdered form as a replacement for hot pepper. I am curious if such use still causes people to throw up.

Mycologia might be a good place to start your research, and please let us know what you find. Here is a search on the Mycologia website for "russula lactarius"
