I use just a little less than a 1/4 cup of water for each 1/2 pt. jar and I boil the jars in water in a pot for 60 min, with tin foil and tape over the holes, but yet moisture builds up in my jars after a week or two after innoculation.????

that is probably not just water damage, but bacillis. have you smelled the jars after you open them to throw them away? that is usually the tell tale sign of bacillis..
otherwise you need to keep your temp more uniform so condensation does not form, and also, of course, try LESS water.
condensation does not immidiatly form in the jars, thats why it takes a while..

I notice that there is alot of moisture in the jars. there are water beads on the lids when I open them and there is alot of yellow dust when I throw the cake away. I can take a lid off, wipe it dry and a few days later there will be more water on the lid!! AAAHHHHH!!!!!! So should I keep the cake in a warm or cool climate? they have been in room temp which has been cooler. Out of 2 yrs. of growing I have never had such a problem!! I am considering a pressure cooker instead of a regular 60 min. boiling in a pot
