If possible I'd wait until the jar is 100% colonized.

Then when you birth just be very gentle and try not to disturb any of the pins. Since you have in vitro pinning you should have mushies in no time after birthing.

Orange is bad...you dont want that. Give the cake a few more days in the jar...then birth it regardless if its 100% or not. Its safe to birth at about 90-100% colonization (in some instances). Its a little easier for the mycelia to cover that last 5-10% when its out of that constricting jar- but there is always that chance of contamination...you take your chances.
Now about colors in your jar..
Yellow blotches on mycelium- OK. Thats water touching the mycelia.
Silky/fluffy white, dense- OK. Thats mycelia.
Cottony white,grey/sparse- Contamination. Throw jar out.
Electric blue blotches on mycelium- OK. Oxidized psilosin. Thats the good $hit...
Any other color= BAD NEWS. Throw jar out.

The orange blotches look like liquid...dark yellow orange, more orange though...

Yea...thats cool...sometimes its the water that turns yellow...and the orange color might be some rust from jar tops that gets wet..and evaporates. As long as its not some type of growing "mass" then your OK.
