i just make sure the temps are low....like constantly at 65-70 farenheit.
i have found that sometimes only an overnight coldshock will take longer to trigger fruiting than if the temps are constant.
and they always seem to do so much better when i forget about them and leave them in the chamber...i come back a few days later and everythings better.
are those pint bags? i have never used the bags before...16 days sounds damn good though.

That looks like a big old bag of cobweb, maybe that is why it is not pinning? And 16 days? thats how fast cobweb spreads. quick I think. MY friends bag is bright white. Maybe a poor picture. But it wont pin if it is cobweb.

It took about three weeks for my cakes to start pinning after they were exposed to light. 16 days of full colinization sounds way to fast though. But if it is mycillium, be patient. I'm on my second flush with the bags right now. I innoculated on March 8th. Be sure to dunk them after the first flush.

The cakes from my bags did not pin for two weeks. A few a bit longer. They always eventually do, and it brings a smile to my face.
