Just an interesting side note to consider for another experiment. They make pasta now out of brown rice flour. The ingredients are usually just "organic brown rice flour and water. It is available at Sprouts and Whole Foods Markets and Wild Oats and other similar stores.

I have eaten alot of it and the primary difference between it and regular wheat pasta is that it doesn't turn mushy, even when overcooked, and the nutritional benefits.

If this doesn't work, or even if it does, brown rice pasta would make for an interesting experiement.

In all reality if the pasta works out couldn't one just make their own pasta out of whatever flour/grain they like the most? Rye pasta anyone?

I wouldn't see why not! it would be more work than just buying already made pasta but the end result would be more exciting if it was your own =)
