Two more newbie questions

What exactly is casing? Also if casing produces better yields are there any disadvantages of just trying to grow shrooms cased from the get-go? How different will the yields be between PF Tek cakes on vermiculite or a cased crop? I'm just not sure I understand the differences.

Also...not all the TEKs mention fanning or air exchange...what is the basic rule of this once your cakes/cases start fruiting?
