chicken of the woods

Found a chicken of the woods today. I've eaten them before, but never enjoyed them much. Anyone have a good way to cook?

Oh, and I'm a chef.  A creative one at that.  And i can't come up with a way i like to cook Chicken of the Woods.  :undecided:

When I ate it last, it was a bit older and I had a ton of it. So I'd like to try a newer one in a good way. I think a few slices put on the BBQ with BBQ sauce would be delicious.

Hmmm, I don't like BBQ sauce. Ehehe, but go ahead and try it out, tell us how it it!

Don't forget to marinate in some oil based sort of sauce. Hmmm, lemme think up a recipe...

1/2 cup oil (olive, canola, whatever)
3 Tabelspoons BBQ sauce
Salt & Pepper to taste
1 Tablespoon Vinegar (red wine, rice, balsamic, etc)
1/2 teaspoon Paprika
Dash of garlic powder
dash of onion powder

Taste the marinade at the end, add a little more seasoning if it tastes like it's missing something. Let marinade for 30 min or so, once on the BBQ, baste with BBQ sauce.

do you mean hen of the woods,grows at the base of trees? if so try frying some sausage jimmy dean or what ever u like. fry 4,5 thin 3/8" or so slices in a skillet,witch you have a lid for. brown up nicely remove an drain. put onions in same skillet with brown bits from cooking sausage,add salt and saute. add water and hens,cover and cook. also dice up jimmy dean and throw him in. i have a small skillet in witch i put white flour and dry brown on low heat,do not let it burn. this is my own idea,it works great and keep extra fat out of your diet. this gets rid of the ( play dough taste ) in the flour, and makes a simple rue thats good. when the hens are cooked to your liking add a little garlic cook a min. then add flour to thicken. it is now ready to be enjoyed, this will make you hungry for more I Guarantee... next time i will use stewed tomatoes in place of much of the water, tomato gravy is wonderful...

chicken mushroom or hen of the woods, this way they are seperated and not confused..i think any mushroom could be cooked this way it adds sausage flavor to the texture of the mushroom..i harvested some sulphur shelf this fall,and a ton of hens. i like them both, wish i new more to enjoy natures bounty more fully. :wink:

there is only one way to find out.. the tomato gravy is great for breakfest, make it like sausage gravy and use it the same way..oh so gooooood.. :grin:

hot sauce definately, they are great in bbq sauce by itself as well, though i too prefer to add ingredients

hen of the woods can easily be sauteed with some butter, garlic and salt like most mushrooms and taste great.

chicken of the woods prepared in that same way will taste like really bland chicken it needs a much stronger flavor to go with it than most mushrooms.

look at the base of oaks when the leaves start to change. look for very large or very sick trees. they should be in your area soon then you will know why they are called hens, and if you cook it know what they taste like. i have enjoyed them since childhood,im 50..

Actually, I'm not a fan of spicy.  So hot sauce didn't even cross my mind.  Sure, add hot sauce, I'm sure it'd be good. 
A few yrs back I started eating spicy foods cause i liked the sensation...  But then I tried eating my favourite food, Tiramisu, and it tasted like whipped cream!!  The subtle marscapone flavour was undetectable!  Ever since then I decided spice was not worth sacrificing my taste buds, and my enjoyment of mild but decadent treats.

I don't know if you are picking ones that are past prime, not cooking them for the proper length, or if you just don't like em. :shrug:

They were always one of my favorites. I usually pan fry with butter and/or seasoning and eat it straight or add it to some kind of rice stir fry.

I pick both white and yellow pore ones, but I tend to like the white pore one more. It is more juicy/tender. It also seems to get bigger. The white pore species is found at the base of trees - sometimes growing right next to or nearby hens. Same habitat as hens.

I pick both every year.



And the yellow, which grows straight out of wood...
