Cold shock and then see what happens.
Scratching may be a good idea if the overlay is too important.

I had the same problem, the mycelium loves the coir, and colonises it very quickly. Suggestions were to deep scratch, cover with layer of 50/50, cold shock.
I didn't do any, except they were cold shocked before the overlay, but it still colonised it.
I have pins on the casing now, just treated it like a big cake.
Good luck

I seem to be having the same problem with my TC's cased with coir. Damn mycelium just eats that shit up. I don't know what I'm looking for so I'm not sure of it's starting to overlay or pin (first attempt ) I've seen heaps of posts about pinning and overlay but I just can't work it out. I've got stamets books too (TMC and GGAMM) but they are a little light on pics of pinning and overlay. I think I'm just gonna wait it out and see what happens.

first picture... is overlay.
you have enough room in that pan to put more Coco Coir in it.
just cover it lightly with more.
You can let the 1st one go...It will fruit with overlay.
but you might get uneven pin formation.
2nd picture... it looks ok.
I'd let that one fruit....now.
Coco Coir is great....but you have to watch it like a hawk.
As soon as you see any white coming through.....fruit it.
Puerto Ricans are a bitch.. in Coco Coir.
Never put a Puerto Rican in the incubator.
Fruit them as soon as you case them with Coco Coir.
South Americans are too.
Good luck!

by "fruit them" i assume you mean move them to the fruiting chamber from the incubator, right?
