this is for a 1 pound fillet
olive oil 2 tbs mayonaise (use the good kind people, not the cheap ass-mayo) 1 tsp dijon mustard 1/4 cup crushed croutons 1/4 cup chopped pecans (or other nuts i suppose, i just have lots of pecans around) salt and pepper
oil up the fish, salt and pepper and put on the grill, skin side down. mix the mustard and mayo in a bowl and put on the fish after about 10 mins. then the crushed crouton and nut mix. close and grill another 5 mins.
seriously simple and delicous

direct grilling, medium heat. make sure the coal bed is raked out low and even. if it looks like they are gonna burn before they are finished cooking you can fold up some aluminum foil and slide under the fillets. i think almonds or walnuts would be pretty tasty. main thing is not to use crappy mayo or mustard
