almond crusted halibut!!!! For my girl.

Thinking about pan searing some thin slices of halibut in olive and white win and crusting them in toasted almonds.  Still haven't figured out the mechanics.  any ideas. 
Maybe pan seared halibut with an orange-toasted almond fraiche? Ummmm, fuck, I just don't know what to do. Suggestions please?

Use an oven instead of a pan? Or better yet: a bbq? It will reduce the problem of the almonds sticking to the pan instead of to the fish. And I'd certainly suggest looking into some recipes for trout crusted with almonds, as it's basically the same thing. Btw, thinking of this concept, I think almonds wouldn't be the perfect companion to halibut. If done right, there's no doubt it will be enjoyable, but I think almonds go better with the subtle, earthy flavors of sweet water fish, so trout would be the fish of choice. Nevertheless, let us know how it works out :thumbup:
