Yuck! What kind of contam is this?

After loosing 11 of 12 jars on my first try to various contams (green mold and some strange orange stuff) I decided to keep the last jar to see what would happen. After two weeks it was about 40% colonized (was going VERY slow...) and had no foul odor or abnormal color. Today, after a full month and about 75% colonization I noticed the same orange-red coloring that had destroyed my other 11 cakes. I decided to try birthing the cake early, cutting off the contaminated and uncolonized substrate, so that I could see what the fruiting process was like. I opened the jar and carefully smelled the top. A "sweet" smell was evident, although I'm not sure what that means. Smelled almost like carmelized sugar. Not "foul" in any sense of the word. Birthed the cake and immediately noticed that something was horribly wrong with it. One of my fingers (thankfully I had worn some surgical-style latex gloves for this) sunk about one inch into the bottom of the cake (which was not colonized at all). I proceeded to spoon away the bottom portion of the cake. What I found was nasty. The entire middle of the cake was full of blackish "blobs". The substrate had turned a dull black (dark black in the center of each "blob") and appeared as if some of the substrate had just up and dissapeared. Hard to describe. Each "blob" was veri soft, but not wet, compared to the surrounding substrate. The "rotten" smell was easily noticeable in the room as I did this. Turned out that the entire middle of the cake was gone. The top inch was perfectly colonized, as was the outside 1/4 inch. Tossed the entire thing. So what was that black stuff?

I used to always wonder what my various contaminations were, but after growing so damn many of them, I realize it really dosen't matter... contamination is contamination. I will check in TMC when I get home and see if anything in there matches your descriptions, though even then, it is a guess at best.
