I'm brewing myself up some Mead

W00t! A nice shroomery member helped me get ahold of some brewing yeast... so now I can start a batch or two of Mead :laugh:

I'm going to start off with trying the Wine yeast, although they also sent Lager yeast and something labelled only as "brewing yeast".

Wine yeast will probably leave me with a decently sweet mead. I'm looking forward to it.

I'm Probably going to be starting with 5 liters of liquid. I only have 1 pound of honey, and since I'm broke, I'm not going to go buy honey... it's expensive. :crazy:

If I had more honey, I'd sterilize a couple empty 1-gallon milk jugs and brew a few gallons of mead.

ok, the yeast only has part to do with the end flavor

champagne yeast would have been best(higher alcohol content, ie the yeast lives longer before the alcohol makes it dormant)

mead is a labor of love...at least 6 month

Champagne yeast is indeed a good choice, but it's alcohol tolerance also tends to leave a more dry mead.

I've always hated champagne, too dry for my tastes. If I want to get drunk... I'll buy scotch.

I want a mildly alcoholic sweet mead... a low proof is good for what I want.

Of course it will still probably be fermenting for a while... I don't mind. While I'm waiting, I can be doing other things, and getting prepared to start another, larger batch.

its fun..when I was brewing alot I was making 20 gallons of beer a week

I can picture myself pretty unsafe with all of that alcohol around. The more I have the more I always end up drinking.

no please dont use milk jugs. use glass cause the plastic taints. ive brewed quite a few gallons of godly nector. recintly 4 gallons of poppy seed ginger key lime vanilla methaglin. it turned out dry and extreamly potant. i used flincmans baking yeast it works well your alcho% will really depend on the amount of honey you use. i use 5lb.s per gallon myself. if you cant get that much to start its cool just add in the following weeks this will also extend yeast life and incress potancy. and after racking if to dry just add more honey(never sugar) it works and always age no less than two months before drinking(6 is better)
