Wine brewing... and Mead

Well, I've got two gallons of wine in the works( One is clover and banana, the other is carrots[half wild, half orange])
Anyways, I've decided that mead is so much easier, and can be just as rewarding, also, it is much simpler. Here is a good recipe.

Ingredients:

* 1 gallon, bottled water
* 2 pounds, generic honey
* 1 Medium lemon, zest and juice
* 1/4 teaspoon, Red Star Champagne yeast

Procedure:
Simmer these together and skim off the scum as it rises. If you wait for it all to rise so you can skim just once and you miss the moment, the scum sinks, never to rise again. Pitch yeast when cool and kept it at room temp (65-72) for 5 weeks where it bubbled about once every 5 seconds for the whole time.
Specifics:

* Primary Ferment: 5 weeks

Glass(one gallon) carboys with bung and air-lock are only $5. I suggest all people buy a few, and mix up a few gallons. It's way cheaper after the second batch than buying your own alcohol.

It's so simple. Instead of fruit, pectic enzymes, three racking, and a clearing, you just rack it once, RIGHT INTO THE BOTTLES! Ha ha, how is that for a novel concept. Sure beats the one year wait for 'fine wine', too. I'd imagine I'll be sipping some homemade mead long before I drink my herb wines.

Oh ya, and you can supercharge that recipe by using high quality honey, with a high quality bottled water. It is totally un-necessary, but you can cheaply improve the taste. Just think how smooth high quality wild-flower honey with Fiji water would taste using organic lemons!!

yes.. I would think that using RAW honey would improve it significantly?
I know little to nothing of brewing.. but I drank some homemade mead at a drum gathering and dayumn that shit was good. I'm not much of a drinker either.

I'm not sure on that, but I checked a few recipes and they said use processed honey. I'm sure it would work, don't quote me though if it fails! I don't drink a whole lot, but I do drink two beers almost every day... for some reason my tolerance does not raise too high.

beer is 4-10%...mead is 10-14%... while most wines will be 12-20%... There are extremes, though.

Never had it, but just imagine an ice cold brew sweetened by honey. It's so fucking easy it irks me I did not start home-brew earlier than last week.

I know dude, but it is technically ready to drink after 5 weeks. If you let it age five times that long, the taste improves GREATLY( and the alcohol content goes up just a bit)
