brewing ginger beer/root beer

are these drinks made with live yeast, like real beer? if so, how come the yeast doesn't turn the sugar into alcohol? and how come so much sugar is left behind? or are they not brewed at all, and the name is just a misnomer?

Those are probably force carbonated. The alcoholic versions use yeast.

but there's no such think as alcoholic root beer, or alcoholic ginger beer, is there? why do they have pictures of brewing carboys on the labels often, and why do they call them "beer" if they aren't actually brewed, but just made like soda?

Instead of using the ginger beer plant, some other form of live culture may be used to produce fermented (real) ginger beer. This is often baker's or brewer's yeast, but can also be a culture of lactic acid bacteria, kefir grains, or tibicos. Ginger beer is fizzy due to carbon dioxide. The alcohol content when produced by the traditional process can be high, up to 11%,[1] although it is possible to ferment ginger beer in such a way as to produce little alcohol.

Ah, but there are alcoholic versions. They used to be really popular, but are pretty rare (in the US anyway) now. The whole brewed thing probably just refers to extracting flavors from ingredients in a kettle.

I just finished off the last bottle of what I thought was a botched ginger beer experiment. Turns out I just needed to let it sit longer. It was way too intense when I made it, about 4 months ago or so. Also, you don't need to do the whole plant thing, and I highly suggest staying away from baker's yeast. I used champagne yeast, but I think a more subtle ale yeast would be better.

I could almost swear that I've seen "brew your own root beer" kits. Where, I have no idea, but you may be able to fing something online. But now I'm curious myself and would love to have an "endless" supply of Birch Beer.

birch beer is really good, i had forgotten all about that stuff :drooling:

jfisher - a friend of mine made a batch of lemon ginger maple porter a month back. it's still sitting fermenting or whatever in his closet, but i'm waiting in anticipation for him to bottle it so i can give it a try.  it should be really good; i've had some tasty maple porters and they tend to be really sweet (like sugary) - almost a bit too sweet - so i figure adding the "zing" of ginger and the sour flavour of lemon would round the beer out a bit and end in a tasty product. i can ask him for the recipe the next time i see him, if anybody would be interested in homebrewing their own

I made a batch once, I didn't make it right but it still came out pretty good.

It does contain alcohol, BTW.
