Alright, got the adapter. First boot up....
Fans on. 1 beep. Phew. Everything looks okay. At first my SATA drive wasn't showing up, but it seems to be there now. The power and HDD LEDs on my case aren't working, but I'm sure I can figure out how I misconnected them.
Alright, more questions:
1) My CPU (AMD Opteron 165) is being detected as: AMD Hammer Family - Model Unknown ... Is this cool?
2) What to do from here? This is where I really get ignorant. Do I need to do anything with the BIOS? If not, my plan is as follows: Install Windows XP on a limited portion of the 80g drive. Then, using the Kubuntu install, chop up the remaining parts into different partitions. Then install Kubuntu. I'm planning it this way because that's more or less what I did on my current computer and it worked out well.
3) A question on the file systems. I will mainly use this computer for Linux. I will obviously have a NTFS partition for Windows and a ext2 partition for Kubuntu. For my additional partition(s), where I will have most of my shit stored, I want a file system that can be written/read by Linux and at least read by Windows. What's the best to use?

Model Unknown should be fixed by using the newest bios.

Shit guys, I think I really fucked something up! Let me take you through what's going on.
I wanted to get an updated BIOS. Went to DFI's site. Downloaded the provided zip for my board, extracted the exe and bin, put them on a newly made MS boot disk. Booted with the disk in the new PC. Typed the little command. Screen came up and took me through the update process. Everything seemed to go smooth. It finished after about 30 seconds. A little box popped up and said 'Complete. Remove disk and press F1 to exit' (or it might have said continue. I removed the disk and pressed F1. The screen goes black and the power LED on my case turns off, but the computer is still on and I can still hear drives spinning. Fans are still running. After about a minute in this weird state, it shuts itself totally off. Following the instructions I've read, I turn it back on, hoping to complete the update and save changes. The fans start. No beep, nothing on screen. After about 5 seconds, everything turns off!!!.... I try again, get about 7 seconds, hear a beep, but it once again turns off. I did this 5 or 6 more times. One time I actually got something on screen for a few seconds. A big graphic that said 'Infinity' (I don't think I have an Infinity board)... Nothing...
What the fuck did I do?

I know nothing about this, but maybe as a start try removing and replacing the mobo to see if it will "restart" it sort of.

sounds to me like you flashed the wrong bios, you may want to try a re-flash of a different bios, Infinity is a certain type of DFI board.

Yeah, that was my first guess after I realized what Infinity was. The thing is, I'm sure I got the BIOS from the correct page ( here). Maybe DFI has it linked wrong? I'm not sure where to look for different ones. I guess I'll try emailing them...

Yeah, you probably flashed the wrong bios. No beep isnt good.

I'm usually getting the beep. And just one. Sometimes it just shuts off before it even gets to the beep.

You might have flashed the wrong bios. I don't know if theres anyway to recover without replacing the bios chip itself. Contact DFI and see if they can offer anything.

That doesn't sound like a good response.......You should be able to find a computer store or something that will replace your bios chip. It shouldn't be too expensive. Go that route before buying a new board.

Just try to return it on your warranty and say it was defective when you put it in. You could always try and get a replacement for free.

Hmm. I got a second response from DFI. Weird.

Well, that's more helpful. Everytime I get a response, I figure the support guys as assholes cause they use real frantic English. It's just dawned on me that it's probably some Indian guy in New Delhi... Maybe I'll give this a whirl tomorrow.

First post from the new computer. I have XP installed.
Advise in DFI email seems to have worked. No big problems so far. One annoyance: that first screen (the one that tells you to 'Press Del to enter Setup', sorry I don't know the name for it) flies by. Like less than a quarter of a second. So I can't get into BIOS. If anyone knows any way to fix that, let me know.
I just wanna say thanks to everyone that gave me some help. This wasn't the kind of thing I enjoy doing. I did it to save money. I'm indebted to all of you who helped me through.
I'm gonna try and add Linux in the next 24 hours. I'm sure I'll have more questions. My question about file systems is still lingering (see question #3 above): what would the best file system be for storing my general files and multimedia, so that both operating systems can take some advantage of them?

Should be in the manual somewhere... When I don't know, I simply hit lots of keys real fast after power on... usually I run down the row of function keys and hit delete as well... as they keyboard buffer fills it will usually beep... it may take two or three tries to find the key this way, start at a different place each reboot (work from f1 to f10, didn't get it, work from f10 to f1, still no go, try the delete first, etc...)
Congrats on getting the computer together. I always felt good using a computer that I had assembled rather than one I had purchased pre-fab... donno why... a pride thing I guess...

wow a 333mhz huh, blazen fast. I have a laptop that was bought in 2000 that is a 650mhz and 64 mg RAM and cost $3000! Now it is a book end...
