Having troubles with cracked corn hydration

i've been following the tek to the T, and yet it seems that i am some how over hydrating my batches of corn.
the tek says to boil untill a layer of nastiness (lol) forms on the top. well the first time i tried this i forgot about the layer of stuff untill it happend, and then i forgot to rinse it and when i remembered to it was like 10-15 minutes later.
that batch only seemed slightly over hydrated even though i fudgelled up.
the batch i made last night filled 8 halfpint jars (the max my $5 pressure cooker can fit) and i followed the tek, but i didn't even wait for the crusty layer this time, it looked like it was about to start getting it, then i rinsed immediately with cold water (like im supposed to) and it looked wet so i let it sit in the strainer for like 15 minutes. i thought it looked a little wet but not much.
i pressurec cooked for 80 minutes at 15psi, and the jars look as though if they got any more moisture, they would had extra on the bottom.
please help...
the jars work decent now (last batch was 2 weeks ago/lipa yai and almost fully colonized a couple ONE PINT jars) but they definately could be faster, or what i think from what i've read.
why is the stuff over hydrated? how do i avoid this?

dont gauge by the layer, gauge by the grain itself.cook it til its about to pop, dont do more. maybe until just a few pop. use quarts, not pints. condensation is normal, you need to have space to shake it to distribute the more moist kernels and the condensation over all the grains instead of letting it pool up places. maybe try rye or wbs, i dont use corn.

there, so you need to:
gauge by the grain itself. cook to proper moisture, not til you get froth. and drain WELL. if you did a good long soak, you might not need to simmer like that at all. just soak and drain, but always gauge by the grain itself.

use quarts, not pints. leave room for shaking. after pcing, tighten lids, shake the fuck out of them to distribute moisture and mix grains.

consider using wild bird seed or rye grains.

first i'd recommend waiting on grains until you can get a bigger pressure cooker and do quarts as said above.

i've had some trouble with cracked corn myself. altho i didnt have only cracked corn, it was part of my wbs mixture (which i wouldnt have bought if i knew that was the case). i ended up with my wbs clumping together pretty badly. if the cracked corn wasnt there i guarentee it woulda been fine.

if you must mess around with cracked corn... go by the guid but lessen the simmering time (or whatever the hydrating process may be) by say 25% of the suggested time. if that is still too much, go up to 35-40% less time. if that doesnt work then say fuck cracked corn. i donno how good of a substrate it is when done properly, but jimmy cracked corn and i dont care :smirk:

i'd suggest using wbs. you can get a great mix at wal mart, it will even say either wild bird food or wild bird seed right on it. it has milo millet and sunflower seeds in it which is a pretty good mix, anything else is kinda unnecessary. the other thing i'd suggest if you have easy access to is rye berries. i jus started 4 quarts of rye and i cant wait to see the results :smile:
