Induce pinning

Will light just induce pinning or should i cold shock my casing of pc's?

3 things must be meet to induce pinning.
1. Light
2. Reduced levels of CO2
3. Reduced temperature.
These three things act as a catylist to the mycelium to start pinning.
Wether or not you need to cold shock depends on where you live (climate) and what type/strain of shroom you are tying to fruit.
Usually you do not need to cold shock. Especialy if you are using the PF (amazon) strin.

Light is fine, some people do both, some just add light do either or both.
Very little light is needed to induce pinning

When do we know when to start pinning ( ie will the casing layer be fully white?)

Strain is irrelevant. NO CUBENSIS STRAIN BENEFITS FROM A COLD SHOCK. Cold shocking is for fall fruiting edibles. The most prolific pinsets I've ever seen with cubensis come from colonizing and fruiting at around 75F.
After full colonization, the number 1 pinning trigger is fresh air exchange. The number 2 pinning trigger is evaporation of moisture from the substrate, which is accomplished by ensuring that number 1 is met. The next most important factor is maintaining near 99% humidity. Last but not least is bright light. You can use light from a bright window, or fluorescent or LED light in the 6500 Kelvin color temperature range. Light should be provided in a normal day/night routine. The brighter the light the better. Bright light penetrates further into the substrate than dim light. The old adage that 'just a little light will do' is flat out wrong. Bright light is far better. RR

How do we tell if the casing layer is fully colonized and ready for pinning though?

Correct me if im wrong, but the proper tech for your casing layer, which is placed ontop of your 100% colonizaed substrate, would be to wait for myc to poke through the casing layer. Then patch those spots and start fruiting after patching.
