wierd smell with bird seed help?

I USE 1/3 FINCH SEED 2/3 VERMICULITE IN HALF PINT JARS I INOCULATED THEM WITH CAMBODIAN CUBENSIS SPORES AFTER THE JARS WERE STERILIZED FOR 1 HOUR. OK MY PROBLEM IS THAT MY JARS STARTED TO COLONIZE AFTER 5 DAYS AND ARE PROGRESSING BUT THE FINCH SEED AND VERMICULITE SMELL SOUR THEY SMELLED LIKE FRESH BREAD WHEN I INNOCULATED THEM BUT NOW SMELL SOUR? BUT THERE ARE NO SIGNS OF CONTAMINATION SO ANY INPUT WOULD BE GREAT. HAS ANYONE EXPERINCED THIS PROBLEM WITH VERM/FINCH SEED SMELL THANK YOU! Azurepower
