I found an awesome sparassis Crispa! It's probably 5-10lbs. Anyone know a recipe to cook this one? Is there a market value for it?

You mean Hericium? Big shaggy thing, looks like a bunch of icicles?

I can't find reference to the species "crispa" but I know the genus, & they're delicious--closest thing you'll ever taste to lobster that isn't lobster. Can be done up in a stir fry w/ water chestnuts, snow peas & a mild Cantonese sauce, but are best just drizzled w/ a little melted butter & lemon juice, then grilled under the broiler.

It's the Cauliflower Mushroom, Sparassis crispa. They grow as big as basketballs and are very tasty.

I've had them 'frittered' in a beer batter. We kept them in the fridge and snacked on a plateful all week!

I haven't seen one so large and beautiful. Are these not symbiotic? It seems they probably are or would be cultivated. They are so tasty fryed in butter. Enjoy

This species is parasitic. I found it interesting that this one was growing on a stump. I have prepared it two ways so far. First I sauteed it in butter. I think I cooked it a bit too high, it was a little too crispa. Last night I boiled some and topped it with spagetti sauce, it was excellent. I can make arrangements to ship a decent sample of this to anyone interested. Please PM me. I would like as many people as possible to experience culinary mushrooms.
