To answer your question, a grayish green.
I also like them fresh. They taste much better I think fresh, kind of like a chanterelle (sp?). Its the kind you find on poplar logs that doesn't have a stem.
How can chanterelles be a delicacy, but cubes not?

Some have very stringy stems, which I don't like either. Some, like Texan and Mexican, are smaller and more dense, less stringy. Those ones were the best fresh.
But if you don't like raw mushrooms in general you won't like raw cubes.

Its the texture that gets me with the dry ones! cubes arent sticky or slimy at all! well, maybe a little sticky.
But again, its all about how you normally eat them. I always pick mine fresh from the field, ive never bought shrooms before, so mine are almost always fresh. The only dry ones ive had were during one harsh winter...
I think the people that eat the shrooms dry probably buy them that way, or they just seriously hate fresh shrooms (for some strange reason).
This is a terribly biased and opinionated thread. No point to be made here. start a poll or something...

Yes it's not like the ppl who hate fresh shrooms will change their minds over what I wrote.
But I do think it's true that people who hate fresh cubes just don't like eating any type of fresh mushroom. It is an acquired taste for sure. Like if I see morelles on a hike for example, I will gobble them up.

I will have to say make mine dry. I just can't seem to get off on the fresh ones like I do the dry ones.

I hate all mushrooms, I have to dry them and capsule them, or mask them in tea or applesauce.

dry for sure,i cant stand the texture and taste of wet,hell i dont like any mushrooms..so dry is for me

yep, tea from fresh shrooms.
I boil 1/2 cup of water in the microwave - then chop up some fresh shrooms & drop them in the hot water. Once it cools down I drink it in about 2 gulps. 15 minutes later, you'll have an intense body high!

I've never tried the fresh at all, but I would really like to. The taste doesn't really bother me at all, but the dryness/texture gets a bit anoying to chew. Are fresh mushrooms fairly 'wet' tasting? or are they sort of leathery?

Fresh or dry, getting little bits of mushroom stuck in your teeth sucks. I'm usually picking tiny pieces of fungus out of my mouth for most of the come-up. Next trip maybe I'll bring along some dental floss.

You dont pick anything out if you drink tea (or orange jice or a milkshake), eat applesauce, or take capsules.

It has a soft texture. Not hard to chew at all (like dry shrooms). The worst part about fresh shrooms is the gills. ughh. You learn to deal with it but thats where bugs like to hide in psilocybes, and thats also the softest part (it turns to a gooey mush in your mouth if you hold it in for too long). The stem is stringy and hard to get down, so most people that eat fresh shrooms that i know just eat the caps and use the stems for other things (or the stupid ones ignorantly throw the stems away). The cap flesh is perfect though... soft enough to go down easy but not too soft.

Mixing shrooms with orange juice or making tea brings on the high too damn fast. I feel like I am getting airsick. I like to have something on my stomach and eat 4 or 5 grams over 1.5 to 2 hours. I put 7 grams into some oj once and blended it up, then drank it in ten minutes and got far too high far too fast. It took 2 hours of misery before the edge wore off and I could enjoy the ufo's.
