    #435177 - 10/24/01 10:13 AM (23 years, 3 months ago)

I Recently got a 22 quart presure cooker, and it turns my substrate black after a half an our or so. I am using PF 1/2 pints. There is plenty of water left over in the canner after, and i cook them at 15 psi. what am I doing wrong?

Do you have the jars sitting on the bottom of the cooker?? if so add a rack or washcloth so that they are not getting the dorect heat from the burner.

No, they were not touching the bottum, and I just did another batch, and they too came out blackened. I don't know what to do. It is getting really irritating. any sugestions would be apreciated.

I am heating the normal PF substrate. Should I try Cooking them for a half-hour instead of an hour? Maybe submerge them in the water? what could I do?

A half hour is plenty. Fill the pressure cooker so the jars are in about an inch of water.

...and don't submerge them in the water or you will screw up the water ratio
