Cake Recipe Confusion

Ok, I have read several cake recipes and I am getting confused. One site says I should use (for every 1/2 pt. jar): 2/3 verm 1/4 BRF 1/4 water
and then this site says to use: 1/2 verm 1/4 BRF 4 table spoons (1/4 cup) of water
I know corse grain verm makes a diference. so i will tell you i have corse grain verm. which recipe should I use? or should I use another? I am doing this as we speak, currently the verm and brf are in the oven for the first round of sterilization
also, i have heard of many methods for gas exchange when the jars are incubating, which is the best method for the less chance of contamination?
oh yeah...umm, has anyone heard of the method of putting wet verm in the middle of the substrate to let the cake get more moisture and thus produce more of a yield? if so, have you tried this with success? without contamination?
