softening beans

i like to buy dry beans in bulk at the store but i can't soften them to my liking.  i've soaked them overnight and simmered for hours but they never get mexican restaraunt soft.  how can i get the beans soft?  i was thinking of throwing them in the pressure cooker (its used for cooking too right...:grin:) to soften them up...would this work?

Yeah, I think it shoud work. I dunno about what kinda times you should use, but it should work.

Yes you can use a pressure cooker, it works great.

Years and years ago, I worked at Taco Bell and we had to pressure cook pinto beans to make refried beans.

I can't remember the psi, but they were made in the following manner.

Dry pinto beans, water, salt and lard were added to a big pressure cooker. They were cooked for about 90 mins (probably at 15psi). After the 90 mins, the pc was depressurized and then the lid was taken off. We used an electric drill with a long mixing attachment to break/blend/mix the beans to the desired consistency. This was then poured into large plastic tubs and put into the walk-in refrigerator to cool down and solidify. After the beans were cooled, they were taken out, put in a large pan and reheated to 165, then these were used to make the food.
Now Taco Bell uses instant refried beans. They look like rabbit turds that you just add water to.

Did you use salt in the cooking water? If you do, they stay partially hard.

no, i didn't use salt. i don't like to add extra sodium to my diet if i don't have to. if the water was salty the beans wouldn't get very soft?

yes i pressure cook beans if they are hard beens i pressure cook them 15 mins at 15 psi...works like a charm!

yeah, they come dry in a nice sized bag but soaking and simmering alone never really accomplished a soft and mushy bean, they were still tough in the middle.

That's correct. Salting early during the cooking/softening process inhibits some beans from becoming really soft or mushy.

Cooking dry beans w/out a pressure cooker takes time.

Wash and dry your beans. Put them in a pot of water and bring to a boil for 30 min. Remove from heat and let sit over night (12 hours minimum) I normaly do this around 5-6pm on a Friday.

The next morning you may need to add some water (a chunk of salt pork is a MUST) to the beans before you start cooking them again. I will start them around 10-11am on Saturday.
Bring to a boil and then cover and turn down to a slow simmer and stir every 10-15min. They will still need a good 4-6 hours cooking to get the right softness.

This may take some time but it is worth it IMO.

Slow cooked pinto beans and some cooked cabbage and corn bread  :drooling:

crock pot maybe? just throw them in the night before and let them slow cook.
