AFAIK the amount of psilocybin doesn't increase after the veil breaks, but the volume of the rest of the material (mushroom) does as it continues to grow. This will result in a lower concentration of the good stuff by weight, but the actual potency of the chemical is not lost. SO... you're not actually losing psilocybin after the veil breaks.
I'd be happy to be corrected, but I would wait until the veil starts breaking before picking the shroom, to get the maximum amount of active sparkles.
Then, just avoid heating the shroom during drying to preserve the psilocybin.

I would keep them out of direct sunlight because it's a huge variable... temperatures can increase dramaticly with changing cloud cover/time of day. Also, bear in mind that a lot of chemicals degrade quickly when exposed to heat and/or direct sunlight, hence pharmaceuticals coming in opaque packets or 'smoked' bottles.
Put them in front of a fan, the movement of air over them will dry them without the element of heating. For best results use a dessicant to finish up the drying process...
