Mediterranean Chicken or Fish Parcels

I love this recipe which uses foil parcels to keep all the Mediteranean flavours locked all the way to the table.
Mediterranean Chicken or Fish Parcels
Ingredients:
250g/9oz baby new potatos 1 teaspoon olive oil 2 x 175g/6oz firm white fish or 2 butterflied chicken breasts 4 tspns sun dried tomato paste or tomato puree zest of 1 lemon + 2 teaspoons of juice 10 black olives 1 tbspn capers, rinsed a sprinkling of dried Mediterranean herbs 2 sprigs of fresh rosemary or thyme a splash of white wine (optional)
1. Preheat oven to 338F/170C and boil the potatos for about 12 minutes until tender.
2. Take 2 large sheets of foil and brush the middle area of each sheet with olive oil. Put the fish/chicken on top and and spread on the tomato paste. Sprinkle with the lemon zest and juice; add the cooked potatoes, olives, capers dried herbs and lay the rosemary or thyme sprig on top. Season with salt and pepper.
3. Loosely wrap and secure each parcel tightly to enclose the ingrediants completely.
4. Put the parcels on a baking tray and bake for 20 - 25 minutes.
Serve at once with your choice of veg or salad.

its sooo good stefan! I made the same recipe today but used butterflied chicken breast instead of fish with a splash of white wine..

so I was in the supermarket deciding what to make for dinner and then I thought about this recepy but I couldn't remember all the ingredients so I had to make something else. when are they going to place computers with internet in supermarkets
I hope I remember it next time I go shopping

hehe, I do that all the time. I have to make shopping lists and sometimes I even forget to take those with me lol

there's soo many variations you can do. I'm thinking pork, apple and cider next!
