Optimum Temperature

I am growing my first batch as per the "shroom wizard"s method and have a question if anyone can help.
I know to try to keep these jars of rye about 85 degrees (has been more like 75 most of the time, so growth is coming slowly) but don't know if that is still the optimum temperature once I case them in the vermiculite and soil.
I got an ultrasonic humidifier and am casing them in small plastic bins within a big plastic bin inside a locking sea chest.
My question is- how hot to keep them and how to keep them that hot?

So far, I am only into inoculating the jars via this method. I have already planned some modifications to it, i.e. the humidifier and better controlled environment.
Is there another direction I should go in from here?
