Using different flours for PK-TEK?

AHOY! I'll get right to the point:
Because of the nature of my job (read: bakery), i have access to many different types of flour.  Does anybody have experiance using any of the following:  :confused: :confused:
Garbonzo Flour
Spelt
Whole Wheat flour
High-gluten flour (used for making seitan -- yum)
-placeholder for the other kind of flour that i forgot the name of-

I intend to use all, and keep records of the results, etc. but if anybody has used either of these or has any tips on getting them to work best, a reply would be great.

i find that brown rye flour colonizes faster than normal BRF(brown rice flour)

I just read the opposite somewhere, rye flour being slower but thicker mycelium, so....

Wheat I heard is not really suited, I believe it is a nute thing.
Seitan IS delicious! (On a sandwich (after you baked it a bit) with garlic mayonaise) :p

Millet flour might work?

the trick to the rye flour is the chunkieness of the substrate mix it produces, this allows large air pockets that mycelium love, it does take slightly longer if one packs it down

I ran out of BRF today and ended up doing 24 pf jars where BRF was replaced w/ half brf and half buckwheat flour. We'll see what happens.

you should get all those flours and do a little experiment with atleast 10 jars of each and report back.

ya, i mean that packed brf is faster than packed rye flour

but, the opposite is true if the mix is loose and airy

I havent experience with rye flour, only from reading, and know that every cakemix packed is tougher to colonize for the myc.

And yes if people grow lots on rye then rye flour could be good.
On the other way, people grow almost nothing on rice......

Done about 35 qt jars of millet and wbs.Just shot up my 1st bag of wbs(5lb's).The bag will hold 10lb's but thought I should start small.

Don't know about better fruits than brf.My 1st two grows brf did nothing. No contam's, no myc. My third grow started showing myc.While I was waiting on that I got a wild hair and used rye grass seed as the flour.Thought I was having a water content problem with brf.Anyway the rye grass seed finished colonizing before the brf.Never went back. Strain was KSSS. brf is a pain to find were I live.No real experience with it.

Millet is supose to be the best grain for the active stuff.

i have experimented with many 'o flours i would have to say millet is the best

im tryin two jars with wbs flour. we'll see how it goes. I got the ratios alittle wrong X-)

By accident I found some unhulled millet yesterday. Actually my GF did.
DO you soak or simmer it before using it in a cake?

millet flour, but both of those are rockin'. especially when you mix them.

i've used rolled oats, rye grass seed, and a few other household grains with success.

i'm working on a mix of millet, gye grass seed, and oats... the mushies seem to love the mix of nutes.

penligth is right. I am a baker too.
If you were to use something like high gluten flour and substrate bases that act similar, I think it would be best to use a lot of verm. Which in turn would cut the limited nutrients.
