I also grew up in rural illinois and we'd nab catfish outa the lake occasionally. Along with some perch, bass, stripers, carp and blue gills.

Hey catfish taste much better if you cut the gills before they die.

By bleeding the fish out completely you end up with very nice clean and white meat. That goes for any fish make em bleeed to death. Slice them gills right in half

Just a tip from a fisherman who started way back in 1974
