I know this guy that raised crawfish in a pond.  He had a farmers permit to shoot deer.  He'd then throw the carcass in the pond for the crawfish to eat after he took the good cuts.  Guess it all depends on where you are at though.  I imagine learning what the markets are and seeing where you can fill the gap or compete would be important.  Like what do the Taiwanese want or need?  Are they getting cheap catfish shipped in?  Do they have local producers?

Yeah, I'd much rather go out fishing everyday and personally catch everything wild. i just figured with the pressure society places on the wild, it would be more appealing to a certain segment of the market.

I also know there is a HUGE problem with invasive carp species in North America. Carp being a trash fish here, but considered a delicacy in many asian countries. I'd love to learn enough Mandarin while I'm in Taiwan to be able to set up some sort of operation that helps cleanout the carp problem in certain areas and being able to package and ship the carp meat over to asia

Catfish is one of the few fish that's better when farmed.  In the wild they eat a lot of detritus and for that reason to a lot of people taste "muddy" including me, hence why it's always soaked in milk then fried to cover up the flavor.  Farmed though, they eat a better diet and don't have the muddy flavor.
