Thanks, I’m going to give the it a try.  I have a couple cans of coconut cream I need to use up.

Today’s cheat meal - Thai chicken pizza.  Forgot to take a picture after it was done.

I have another can of cococnut cream.still, I might try toasting some shredded coconut, grinding it with a coffee grinder and adding it to the custard at the stage youbadd sweetener and vanilla

Why is there so many coconut products lol, cream, shredded, oil, extract

I used that smokey habanero seasoning that I got for free in my chicken curry last night. 1 teaspoon. It's more spicy than I thought it would be but still not bad. Habanero has a better flavor than ceyenne.

I didnt take a pic but I followed this ai recipe

I doubled all the ingredients, and I had to use extra cream like ai said to smooth it out

I added like 5 servings of stevia

I added this jam, first time I tried it, the jam tasted gross straight from the jar, but I put it on the cake anyways, and the cake his the off flavours of the jam and it tasted more like NIR all jam

I actually saw a recipe for chia jam for the first time a month ago, and when I saw this jar AF Walmart I had to.try it, inwad planning to make a chi jam when I saw the video, but after tasting this jar straight I don't know if in want to maybe all chia jams suxks or maybe just this brand does, idk

I might make a jam with Pomona's pectin

Bacon & egg breakfast sandwich made with eggs from our new hens and, of course, bacon from our pigs. :breakfast: It was freakin delish.

i randomly decided to make some claw chowder

i did about 1/4cup bacon fat and simmered onion and celery for about an hour on low. added some cubed potato then i added some seafood stock to deglaze and i reduced that mixture to an almost syrup like consistency. took about 3hrs total.

then i added some milk and heavy cream. let it tighten up a bit. tossed in fresh parsley, clam juice, chili pepper flakes and let it reduce just a tad. finished with the clam meat.

unreal. no flour or anything just pure magic.

I've been cooking since 4pm, its 8:30 now, doing my meal prep, all I have left is to cook the eggwhites

I made

Tray 1: 1 sausage, 25g bacon, 4 egg whites, coconut cream custard

Tray 2: 170g taco bowl (ground beef, bell pepper, spices, onion), 150g spaghetti squash, 100g garlic mushrooms

Pics in about an hour

I love cooking for hours. It’s incredibly soothing.

Similar to cooking jars of grains.

I haven’t had the chance to cook very much recently I miss it, I’ve been working a lot so eating mostly takeout.

Pancakes, over easy eggs, ham, bacon, sausage, with real maple syrup, plus a double hotdog with sauerkraut and mustard that I ate before I took the photo, was tonight’s dinner.

I've been non allergic to poison ivy my whole life, every year I think is this going to be the year I get a huge rash playing in the stuff, but nope, I get a little itchy when I shower, I think the hot water spreading the oils reacts with my skin, idk, but outside of the shower no scratching

I made a cheeseburger casserole

https://www.chriscookingnashville.com/recipe-cards?cardid=4705609922494

Edit: I ate my first slice with ketchup and it tasted hella eggy (the "bread" is sour cream, gelatine and egg white powder, I ate my second slice slathered in mustard and it masked the egg taste and just tasted "fluffy"

I think it was even better for breakfast, the meat part actually taste like a bacon cheese burger, the bread part don't taste a lot like a bun but its still nice, especially with some mustard

Making sheet pan kababs and flat bread with Tzatziki and a Greek salad. Hope my grandson likes it. At least I am exposing him to different tastes and textures, but his mom does a great job of that. It is a Wednesday night tradition to have my kids, their SOs and grandbaby over.
