Long-Term Storage of Vacuum-Sealed Mushroom Bags and the Effect of Temperature

Hello everyone!

I have some questions regarding long-term storage, vacuum sealing, and temperature. I did a quick search but couldn't find anything addressing this specific scenario in the forum.

Does anyone know if temperature can cause potency loss in dried mushrooms packed in vacuum-sealed bags?
I've had some very fruitful recent harvests and I'm running out of storage space for the long term. Because of this, I'm going to have to leave some bags in a location that can reach high temperatures during the summer for extended periods (around 30°C to 35°C / 86°F to 95°F).

My main question is: even if the mushrooms are vacuum-sealed, can these high ambient temperatures still cause a drop in potency over time?

Any insights or experiences would be greatly appreciated. Thanks!

ReverendMyc used powdered GT for tea potency tests that was 5 years old and stored in very hot (desert) conditions during that time, they were still plenty potent. He mentioned temps up to 50C :shocked:*. They were vacuum sealed in glass jars; I don't know what bags you want to use, but I would at least go with mylar if you can't do jars.

* man I miss the beauty of the desert but no way can I take that heat anymore!

Jars beat bags every time. No point in using bags if you got jars lying around. As for heat temps, here in my long post I due HPLC testing on samples and again at a year and two after storage (in jars) and calculate the % loss: https://www.shroomery.org/forums/showflat.php/Number/28462347
My storage room goes from low 60s F to mid-upper 80s. Finely ground, encapsulated, bagged, then stored in a tightly sealed mason jar with desiccant and a metal lid seems to retain potency the best; however, at least in my dry climate, after taking capsules out of the jar, they can quickly become brittle. I would say jars completely stuff full, with desiccant would be my next choice. There was a very old thread on here, can't find atm, but if I recall, there was a grower that stored jars in his garage (Florida?) that got upwards of 100F in summer, and he opened them after 10 years and felt they still had retained enough "magic" to do the job. There are frequently posts here where people discuss vacuum bags seeming to lose their seal or vacuum after long storage periods. Jars, room temperature, desiccants, and of course proper dehydrating right after harvest is the key. Good luck.

I've searched the site but found nothing conclusive; obviously glass is the gold standard but what's the result of mylar? I have quite a bit in it (mylar) due to space restrictions; I cycle it out so nothing more than a few months old, and haven't thrown down for miraculix to compare fresh (dry) to x-months stored, but I hope it's decent?

plastic bags are worse than jars because plastic is a little porous, what means that moisture and oxygen will get through in long term.

yes, there's potency loss even at oxygen free environments.

yes, heat causes degradation.

the best way i found was turning shrooms into powder and compacting it in a small jar(40-100ml) with the least amount of headspace possible. also, with silica, obviously. put it in a dark place, at room temperature, that's it. simple, reusable, no need to fancy equipment. you can also put aluminum foil outside the jar with tape, to block light. also very simple, and can make your storage even better.

this makes all shrooms in a homogeneous dose, what prevents you from having unexpected variation in potency, and also preserves the most amount of alkaloids, what is shown in tests.

some data to backup what i said:

in only 30 minutes at 50C using dried shroom powder, there's like 5-10% loss, what is not much, but can be significant in long term.



in the same study they conclude that room temperature dark room is better than more cool temperatures.

now about "powder vs whole fruits" that are also very debatable. and oxygen free vs with oxygen.

what he concludes is that oxygen free is better in both cases, and that powder is better than whole fruit in both cases, with and without oxygen environment.

you don't need to use argon, just a jar vacuum sealer. or you don't need to use nothing at all if you use a small jar and leave a very low headspace and compact the powder very well. this way you mechanically remove most of the oxygen inside the jar.

look at the samples in RED. capsules are the one that had the least amount of loss in these RED samples, having barely any loss. from psilocybin alone, capsules lost only 0,54% in a year, what is pretty much nothing.

the method i told at the beginning, was basically turning the powder in a big capsule made of glass, that offers even better protection than gel capsules, that are also a little porous. glass have zero porosity, so no moisture neither oxygen pass through it. so you can expect a very low amount of potency loss using the method i proposed, based on the studies and tests i posted.

I do agree that jars completely full of powder would be the way to go if I had to store large amounts, and yes, gordoteks work suggest removing oxygen and replacing with argon would be the best. Either jars of powder or capsules of powder, both involve displacing large amounts of oxygen. Desiccants are also preferred, but worth noting desiccants can pull H2O from atmosphere and then release it inside your jars to reach equilibrium, so before jarring I put all my new desiccant packs in my NESCO at 165F for at least an hour, then put the freshly heated/dried desiccant packs into jars immediately before heat sealing in oven to force a vacuum. To do so: Place full, but open jars in preheated oven at 175F for 5-10 minutes (with freshly dried desiccant), remove carefully, will be hot, so use oven mitts, then quickly place metal lid and seal tightly. As the jar cools the air volume will decrease and pull a tight seal on the lid. I also put my jars into thick mylar bags, again adding a freshly dried desiccant pack and impulse seal the bag closed. Overkill? yes, but I want them to be good for years. Also, all of this is pointless if you don't dry your fruits completely to begin with. All fruits of mine get minimum 24 hours at 165F, but if you read my post I go upwards of 72 hours for big PE fruits and I don't see a noticeable decline in potency.

I wouldn't worry about a few months in mylar. Years ago I had some I bought in a open sandwich bag and they were good for a couple years, I am in an extremely dry climate though.

0.54% loss is for psilocybin alone. 4.1% loss was from all alkaloids combined. i think most people here care more for psilocybin than every other alkaloid in the shroom, so i was just stating it.

i also wouldn't do the vacuum using the oven, i think is more counterproductive than just not doing the vacuum at all. it would be better to use a jar vacuum sealer machine, i think is very affordable for most people(don't know about that as is not common to use here in my country).

like i shown using the study, only 30 minutes in temps like 50C has like 5-10% loss or something, what is not noticeable or very much relevant, but is a loss. not doing that and accepting the low amount of oxygen in the jar would be better, as it would be way less potency loss.

even though, vacuum is truly not necessary, as if you do capsules or the method i proposed, is probable that there's only 1% loss of psilocybin in a year, what is nothing, really. even 15% loss is not noticeable if you are testing potency by ingesting, probably even if more was lost no one would notice a thing in practice.

just do the powder method i told, capsules or small glass jars, whatever, it will take way less space, be a homogeneous dosage, and conserve way more alkaloids based on studies and tests i've shown here.

only 30 minutes of dried homogenous shroom powder in 50C have lost like 5-10% of alkaloids.

pretty much every oven start at 80C or more, so let's say you heat your jar at that minimum temp(80C) and put the dried shroom powder inside, of course after taking the jar off the oven.

just the time till the jar cool down from 80C to room temperature, it would take like 15-30 minutes, what would be like 2,5-5% loss, if we are optimistic.

this is the loss that happens every 6-12 months using capsules or compacted powder, using your own data. if you do that every time you want to close the jar, you would be losing way more than if you just closed the jar normally and put no vacuum at all.

so if you want to put vacuum, a vacuum machine is better. if you don't have, that's totally fine, you can remove most of the air mechanically by compacting and leaving very little headspace. so no reason to do that.

another stuff to take notice is that this trick of doing vacuum using heat is also worse than a good vacuum machine. this only does a partial vacuum.

so yes, i find it counterproductive in every way.

You're worried about a theoretical loss of 2.5-5% from the oven heating, I'm concerned about the jar being sealed correctly and keeping oxygen out for 5-10 years. Both valid concerns. But I am not cooking jars of mushroom powder at 175F/80C for 30 minutes. Even the jar itself doesn't reach 175F/80C in the time (5-10 minutes) I have them in the oven. There isn't an instantaneous temperature change. Air is actually a poor conductor of heat in a convection oven, that's why things cook for hours.

No where did I say to heat the jar to a consistent 175F/80C, nor do I say to keep the jar at that temperature for 30 minutes. I've clearly stated you should place jars in an oven preheated to that temperature for ONLY 5-10 minutes.

The study you quote has a small amount of fungal material powdered in a small tube and heated thoroughly for the time given, likely in a fluid bath; arguably the material both heats up to the stated temperature throughout and stays there for the total time. This is completely different conditions than a full, large glass jar in the hot air of a convection oven for a short amount of time.

Simply put, 5-10 minutes in the oven is enough time for the glass to get warm and a portion of the air to get hot and expand, but most of the fungal biomass simply doesn't reach or stay at a steady high temperature, thus, it's not a concern. The entire contents of the jar doesn't reach 175F/80C in the first minutes of being put into the oven. Nor do they stay at that temperature once the jar is out of the oven.

If I can dry my PE at 165F (~74C) for 72 hours and they still test potent, I'm less convinced of quick degradation being a concern in regard to the oven sealing method. Most all my samples are from jars I heat sealed using my oven method, the goal is to seal the jar as best as possible, and this seems to work. The lid indents and stays indented, which to me indicates the jar isn't letting oxygen inside, which is my goal.

if you are gonna seal using your oven method and not open in 5-10 years, then yes, is probably worth it. i didn't consider it because is not the common way people would do. so i was assuming you would to that more often, like once a month or so.

you are also very fixated in the numbers, that are only speculative and i've put there only to have a way to visualize the argument better.

anyway, my reasoning doesn't need numbers. is pretty much like this:

using compacted powder(capsules or whatever) without vacuum has a very low amount of loss during the years.

so any amount of loss is a big loss compared to it

we know that even medium heat in short term causes loss(aka the 50C 30 minutes in the study)

so putting the fungal powder onto heat even if it is medium heat and short term can have a small loss.

but this small loss can be a "big" loss, if you compare to the normal no vacuum powder loss it already happens over the years.

if you do that regularly, it can be even more loss than the natural occurring loss if you simply put no vacuum at all.

that's why i find it counterproductive, or in better words, more effort for not so much benefit. or zero benefit.

using heat will cause only a partial vacuum. a very little vacuum compared to an actual vacuum machine. i also don't think this small vacuum is worth it by the heat you put the fungal mass on.

now, you seem to be a guy who likes science, and everyone that likes science knows that without comparison, results can be misleading.

so you saying the PE dehydration at higher temps test pretty potent(i'm assuming you are talking about actual tests instead of ingesting) doesn't mean much if you don't compare it with room temp air dried shroom, and the same shroom cut in half to not have variation.

is also totally different you using heat in fresh shroom to dehydrate, and putting heat in a already dried fungal mass.

a normal hermetic jar without this heat trick already doesn't let air exchange, so if you do that only to not let air exchange happening, i also don't find much useful.

if you want, see the last page on my air fryer thread. i explain why i think dehydration using heat can be worse. we can debate it friendly if you want and find it useful.

nobody said that. i brought two different tests from two different people to create the argument that powder better than whole.

the oxygen free environment is pretty much established as consensus in the forum. just the powder vs whole that is debatable.

on science, if the same result repeats several times, we treat it like a consensus. of course, in shroom cultivation, we don't have the luxury of several tests reports and comparisons, so i could only brought two tests i found. is not a "set on stone" fact, but is a stronger position than the position of people who only uses anecdotal experience or mechanistic reasoning(even though we can mechanistically explain the result of both tests).

so is not treating gordotek, or whatever person as gospel, but realizing that in two tests, the same results repeated.

no, i don't agree that this is common, and actually, other cultivators said the exactly opposite, lol. if you can grow pounds, long term storage becomes meaningless, as you need to simply grow more and eat, and what loses potency you throw away. 10 years is a ton of time, and if you are growing pounds of dried shroom every month or something, you didn't even need to worry about long term storage as you alone wouldn't be able to live that much to consume everything.

and is you who is actually fighting for small losses. the own data you did proves that only 0,54% of psilocybin is lost in a year my friend, no vacuum, no nothing, why would anyone try to introduce one more degradation factor into this? what i preached was to keep it simple, as doing all of your method could potentially be worse than just not doing it and saving yourself time.

and about your question about opening jar every month, even with the oven seal or not, every time you open you introduce moisture and fresh oxygen, lol. doesn't matter if there's vacuum or not. but with your oven method, every time you CLOSE you also introduce a degradation factor. heat. you said himself you heat the silica and let in touch with the shroom powder+ the heated jar.

and i recommend using small jars pretty much to not open every jar all the time. you pick a small jar, consume it, closes. if you have more, you put on other small jars and leave it closed for how many time you want. every time you open the small jar, only a partial amount of your whole batch gets contact with moisture and oxygen. if that small jars loses potency you throw away a small part of your whole batch and the other is pretty much intact.

analyzing other people data is not useless, lol. data was made to be analyzed and can be analyzed in several ways depending on the context.

your logic is extremely twisted, as not everyone have the time, money, equipment to do tests. in my country miraculix doesn't exist, neither HLPC or anything.

also saying that someone only has value if they bring new data, would pretty much means 99% of the forum is useless and value nothing. almost no one here is bringing tests, studies, or anything.

and the analysis i made was not just take it out of my ass, i used the data to make it. you sound like i just made everything up.

anyway, thanks for sharing the data about different methods of drying, but that doesn't clear anything at all. a good data would be a direct comparison using the same shroom cut in half or something like it. as you said there's more data about this, if you want to share, that would be very appreciated.

I deleted my last post, because it was more about my bad mood than engaging in a constructive reply. Everyone keep growing. If you have data or test results please share openly. Sometimes I forget I'm here to help the community not argue with the community. I am privileged to be able to grow in a legal place and have easy access to HPLC testing, which means, I should be offering more information and results, not bashing people who want to and can't experiment or test. If people have reasonable experiments that they want performed, maybe we should try and make that happen.

Alkaloid degradation is a chemical reaction and chemical reactions increase with temperature, so no matter how you store the fruits or powder an increase in temperature will increase the speed that the alkaloids degrade.

30 to 35C isn't that far off the temperature of 20 to 25C which resulted in the lowest loss of potency during storage in the research so I don't think you'd notice the potency loss in fruits stored for short to medium periods at those temperatures. Could you put the vac sealed fruits in a cooler at the storage location as that would probably help shield them from external rises in temperature?
