Let's trade no takebacksies.  Climate change has fucking wrecked winter where I live, it didn't even snow once this year.  Mostly in the 50s-60s when it should have been 30s.  I would do very bad things to be able to sit in a lawn chair in the snow reducing some sap for syrup and sugar.  I can feel how crisp that is like I am there right now, and I can smell the syrup.

Thanks for the reminder though, these big leaf maples are probably flowing right now and if I were smart I'd dig out my taps and hotel pans.  Big leaf maple has a spicier syrup than sugar maples, I'm not sure which type I like more but I enjoy the variety.

I’ve heard good things about big leaf syrup. All I have on my property are red maple. Takes a bit more sap then sugar maple, but it’s still delicious.

We're in what I think is "pretend spring" here. 80 degrees yesterday and gorgeous. But I fear it's a fakeout and we're in for more chill and hopefully rain. If this is real spring, it's gonna be a horrible summer and fire season.

We're in our 2nd winter here. 3rd winter really gets you down.

I don't consider it spring until my windshield gets covered in bug guts.

Big leaf maple also takes about 2X what a sugar maple does.  Box elder is one I've never had the pleasure of trying but it's also a sap producing Acer.
