How to make Natto or Slima beans
    #11847096 -

Some natto made from large soy beans.

What a commercial package of natto beans looks like

To make the Natto in the first pic, I soaked a pound of large soy beans for 24 hours, and then pressure cooked them, for 20 minutes, 20 minutes was probably a little long the beans were a little mushy.

Soy beans in the pressure cooker.

While the beans were cooling, I boiled two shot glasses in some water and pulled them out of the boiling water, with some water in them. To the water in the shot glasses I added a pinch of salt and about an 1/8 of a teaspoon of raw sugar to the hot water. Once the water had cooled to about 120F I added a teaspoon of natto from the commercial natto to each shot glass.

The beans hadn't cooled enough so I put them in two 9 inch square trays and let them cool some more, till they were down to about 100F, then I added the one of the shot glasses each to the trays of cooled beans. Covered the trays with foil loosely, and sat them in a warm place. The temp varies from 75F to about 95F for 24 hours.
These temps that they incubated at were somewhat lower than is what is called for in the recipes I found, but it worked.

When they're done they look like this,

The white bloom is caused by amino acids that crystallize? on the outside of the bean, when you stir the them the sliminess is caused by long chain polysaccharides the bacteria, Bacillus subtilis makes.

I made some Lima bean natto the same way, it didn't turn out sticky they way the soy beans did.

But they were sticky enough to hold together even though they didn't form the sticky slimy stringy thread that the soy beans did when stirred.

I also made some from lentils, and these were not sticky either, but the smell was fantastic. To me the soy bean natto has a smell like mildly roasted grain or coffee. The Lentil natto batch I made had a very penetrating, an almost skunky, but in a good way, coffee smell.

I pretty much followed the recipe from this page,
http://www.gaia21.net/natto/making.htm

This post, by Hipster inspired me to get off my ass and try making this.

Another post by Hipster.

Natto can be bought at asian stores, in the frozen section it comes in a little Styrofoam container. The packages contain 40 to 50 gram  servings of natto with soy sauce and mustard on the side.

Some more Natto stuff.

But I defend to the death your right to eat it.

Yes, I've been pondering this recipe for a few days now, and the more I think of it, the more it makes me gag. I bet it is mega nutritious though, so all this does is convince me of the strong influence that socio-cultural constructs have on the way I enjoy food.

Is it the slime that you can't stand?

The flavor is very much like beans with a hint of roasted grain

I like the taste of natto. Though it took me a while to try this. I thought about trying it last year.
Now I have to find a good recipe for mustard that is made with ground mustard.

I'm sure I could get used to eating it if I had to. I just count myself lucky I don't have to

This mustard recipe looks ok: http://southernfood.about.com/od/seasoningrecipes/r/blbb359.htm
I have no experience making my own though. Let us know how it comes out

Fermenting soy makes it much more nutritious and good for the body, but natto is absolutely repulsive otherwise.  An acquired taste of the highest challenge.

Hey Koraks recipe is good, I'll make it again with a little less vinegar. It has a little too much vinegar for my taste.
I didn't use the brown mustard seeds, I have some, but I couldn't find them. Also I substituted whole allspice and pulled it out after the simmer.

I started playing with B. subtilis as possible substrate for mushroom mycelium, http://www.shroomery.org/forums/showflat.php/Number/11951155#11951155.

Bump, I've made natto using some other pulses,
lentils very good and
pidgeon peas not bad, but i don't think I cooked the pidgeon peas long enough, will probably make it again using dal and
split peas very good.

I've also simplified how I'm making it, I cook whatever I'm going to make it drain cool and then add some of the cooking water and add about a teaspoon of the commercial natto to what I've cooked and then let it ferment.

I was looking for some Kim chi in an Asian store, didn't find it but they had some Natto and Adzuki beans so I bought a pack of both and cooked and inoculated the Adzuki beans, they are good.

Also made some with black beans, not as good as the Adzuki beans, but still edible.

Also did some Fennugreek natto, it's good, but the toasted natto flavor is not as strong as other legumes and some of the maple syrup flavor from the Fennugreek is lost. It also took about half again as long to complete the fermentation.

And some Navy beans, these look good so far, going to let them ferment overnight, I'm fermenting at room temperature, as did I for the other beans in this post, rather than the higher temps they usually call for.

I like natto alot.. it is an acquired taste though.. I had to eat it a few times to get a taste for it. I also have to be in the right "mood" to eat it.
Every once in a while I get a craving for it, I guess when my body needs what it has.
What they do in Japan is add a little bit of mustard and soy sauce and chopped scallion to it and mix it up and eat it with rice. I enjoy it that way
It is super super good for you

I like it a lot too, the little soy beans in the commercial packages are the best tasting natto I've had and with rice, mustard, soy sauce and scallions is the best way to eat them. I made a batch when from some little soy beans that I bought from Whole Foods, but they were expensive and they don't have them all the time.

Another natto how to link.

To eat Natto, Start with plenty of Saki~!
After a few weeks, you get to really like it.
The Saki, that is LOL.

Seriously good for health.
Not to enjoy the taste but some in North Japan enjoy omg.
I have about 3 freezer packs a day and will try making more again soon with different grains.

Anyone else making Natto?

Made some natto by adding some pasteurized grass to some cooked soybeans. The culture takes longer than using store bought natto as a starter and the aroma is stronger.

I cooked the beans too long and they were mushy, but it worked. I've used the initial batch as a starter for another on beans that were a bit undercooked and it made good natto.

I'm think the grass I used is Japanese Stiltgrass. I was checking a spot where IVe seen Scarlet Cups grow this time of year and the grass was there on the way to the spot. I had planned to use straw and probably will for another batch.
