Calling all lentil cookers: What do YOU do with this delicious legume?

I just filled an 8gal foodgrade vat with 20kg of red "Egyptian" lentils.
Because they were of last harvest and smelled so deliciously uncooked, I decided to cook a pilot batch with just a broth cube and a bit of grass-fed butter to get a good idea of what the lentils themselves tasted like, prepared.
Delicious!
Of course you dont eat em like this (though you could!) but my question to y'all is: Lentil Cuisine. What kind of things do you use lentils for?
All reactions are welcome but I'm especially interested in vegetarian or vegan recipes, since I want to expand in that direction.

Brazilian Lentil Recipe:
Fry up some bacon and onions and make rue in the PC Deglaze with water/beer Add lentils, carrots, garlic, potatoes, sometimes I use some oats. Cover it so that there is at least 2 cm of water over the rest of the ingredients, eyeballing is more than fine.
PC for 7 mins.

I love those red lentils. I have a recipe that my family loves. It "sort of" resembles mashed potatoes, but much healthier:
Lentils & rice o ¾ tbsp. butter o ¾ cup basmati or jasmine rice o ¾ cup red or “golden” lentils o Spice mixture: grind the seeds in a mortar & pestil: - ½ tsp whole cumin seeds - 4 cardomon pods - ½ tsp coriander seeds o 1 tsp salt o 1 cup water o 2 cups chicken broth (or stock) o 3/4 tsp garlic powder o 1/8 cup parmesan cheese (good cheese, and grate it yourself) o Olive oil for finishing o Chopped chives Melt butter, add lentils, rice, spices , salt, water and broth. Bring to a boil, reduce heat, cover and simmer 17 minutes. Remove from heat and let sit covered 5 minutes. Top with chives, parmesan and olive oil.

Mujadara, Natto and curried rice and lentil soup. Mushroom, lentils and chestnuts with various other ingedients depending on what's around is my favorite way to have lentils.

Lentils in a bolognase instead of mince works great. Add in zucchini, shredded carrot, any other veg you like and it's really filling.
Store bought jars work fine or find a recipe you like from scratch with passata, tinned tomatoes, veg stock and italian herbs.

Lentils and buckwheat, even only seasoned with salt is excellent.

My lentil soup recipe. Goes great with my homegrown oyster mushrooms!
Lentil Soup - serves 4 Ingredients
4 cups low-sodium mushroom or vegetable broth 1 1/2 cups of dry lentils 1 carrot 3 green onion stalks 1/2 large, or 1 small yellow onion 1 medium tomato (vine-ripened) 1/2 yellow bell pepper 2 oz mushrooms - preferrably oyster/shiitake mix 3 tbsp spaghetti sauce 3-4 pork necks or bony cuts of pork (optional) 1 1/2 to 2 serrano peppers 1 clove garlic 1/4 cup olive oil 1/4 tsp salt (optional) 1/8 tsp turmeric
1. Bring 4 cups mushroom/vegetable broth to a boil in a pot. (Water may be substituted, though this may require extra salt/seasoning) 2. Chop carrot, onions, tomato, mushrooms, yellow pepper 3. Add lentils, chopped vegetables and mushrooms to pot. Bring back to a boil and then lower heat to simmer. Start a timer for 40 minutes. 4. Dice garlic, serrano peppers and green onion into small pieces. Cut pork into a few pieces. 5. Add sauce, garlic, green onions, serranos, pork, olive oil, salt and turmeric. Cover pot. 6. Add an 1-2 additional cups of water at the 20 minute mark. 7. Continue cooking until 40 minutes are up or lentils are tender and lose chewiness. 8. Porkchop/bones may be removed if desired. Serve.

I make Dal Bhat and I am very grateful that someone taught me about this dish. In Nepal pressure cookers are popular and rightfully so they save fuel, time and costs! This dish should fit in well here on the Shroomery. Search for the Nepal version, not Indian!
It's real easy onion, hot pepper to taste, ginger (peeled), salt and turmeric and round lentils - not the flat ones! If cooking without pressure cooker cook onions first, add in ginger and hot pepper. Use about 4-4.5 times as much water lentils, add in turmeric and salt later. Cook the rice separately. It's that easy, yet so right!
The round lentils - whether french, black or whatever, are so much better than the flat ones that most people know in the USA.

I've recently made an indian lentil soup with coco milk and some spicies, find out that is really tasty.

I have had something similar, don't know exactly what was in it but the mix of red dal, coconut milk and those seasonings is fucking great!
