Pasteruize, composting removes too much of the beneficial bacteria.

let me begin by saying i certainly don't know the answer

FWIU, Pasteurising kills many nasties and stuns the rest. Composting, OTOH, would be a process of culturing the "nasties" to such a massive presence that a full-scale biological war is going on. I was also of the understanding that the heat generated within the middle of the compost will eventually reach pasteurisation (read killing) temperatures which is why the compost must be turned periodically.

If I had to guess, the reason compost works for mushroom cultivation is because the mycelia is analogous to a fresh, previously unencountered army suddenly appearing on the battlefield (not to mention much of the substrate will have been "pre-chewed" making digestion that much faster). Again, I'm completely guessing on what makes sense to me.
