PC 15 PSI vs 17 PSI?
    #27492226 -

I have been PC grain bags for 3 hours at 15 PSI. If I PC 17 PSI how much time would I need?

Most people pc at 17 with extra weight on the rocker. I wouldn’t change your time.

It is quite difficult to calculate the time needed for equivalent heat treatment (which I presume is what you mean). You can look at thermal death time graphs but you have to factor in the time for the core to reach temp, which is why we cook for such long times compared to the canned food industry. It would be interesting to see people run experiments more as wireless thermometers have come down a lot in price over the years. They also have a secondary use if you are into cooking meat.

You could also look up guides for canning times at altitude, there could well be times for using say a 20psi weight but at an altitude where it is at 17psi, they might give regular times for 15psi so you could compare. But again its all estimates, your jar size, shape, hydration levels etc all come into play.

If time reduction is a big need for you I would do it cautiously, maybe drop to 2hr 45min and see if your contam rate increases/decreases and then adjust the time again accordingly.

Same amount of time. Don't try to skimp on sterility. I do bags for 4 hours at 17-20 psi, don't shorten your time just because you've increased the pressure/temperature.

Do jars for 2 hours, 15 psi is a minimum requirement, not a standard; run for 2 hours even if running at 20psi.

Bags for 3.5-4 hours.

There's no shortcuts.

If you’re talking about the vintage presto form the ‘70s then yes! It had a small nick where the gasket sealed with the pot. Covered it with some red rtv silicone and it work perfectly.

What size/weight are the bags that you do for 4 hours? Mine are 1.5k and I'm using oats. Is there a concern that going too long (not suggesting that 3 hours is too long) would dry out the grain.

There is definitely a point of diminishing returns with PC time.  I overcooked some oats at 20psi for 7 hours once and they were extremely slow to colonize.  They were really chocolaty brown, so I'm guessing carbs in them were breaking down significantly.

That being said, I do about 3 hours at 20psi for 4lb bags of oats.  I just ran some 2lb bags last night and did the same 3 hours for them.

you can weigh your bags before and after to figure out the moisture loss.

I am still not sure what your original question was about. As I said I presumed you were asking how much time you can reduce it by to get an equivalent heat treatment result. i.e. it would be like saying "I used to steam grains for 8 hours and have reasonable success, 1 in 20 contaminate without inoculation, now that I have a 15psi PC how much can I reduce it by and expect the same results, i.e. 1 in 20" - if that was what was meant then "the same time" would be an incorrect answer.

But most others seem to have read your post as though you wanted a recommended processing time at 17psi. As you have not questioned anybody about their replies I am still left wondering!

More is more here I agree. Use every bit of time you have to spare with PCing. Not as much as the people doing 7 hours though lol.

Instead of less time@17psi as you want to do
Why not longer times @15psi?

Wouldn’t it be about the same thing

Why not just use your pc correctly?

Jars: 2 hrs @ 15-20psi

Bags: 3.5-4 hours @ 15-20 psi

Bags: 24-30 hours @ atmospheric

This is what you do, don't over think it.

If you reside at higher elevation you'll need to adjust for elevation because science.

My bad. I spoke too quick. I thought you meant jars and even then I should of said 2 hours. Feeling under the weather today.

On topic, I live at elevation and never thought about having to increase PC time. Apparently I should be increasing my PC time by about 25% at 5k feet according to the instant pot website that popped up on my google search.

Don't increase time, increase pressure.
The reason why your pot says to increase time is because you don't have the option to increase pressure.

My question was based on having read that grain bags should be PC for 90 min to 3 hours at PSI15, and having seen a chart some time ago that showed time and PSI/temperature for sterilization and how the PSI/temperature went up the time went down.
