Please explain your process.

Are you taking whole, fresh lion's mane fruits and just plopping them in a jar with alcohol?

I cut up fresh lions mane and soak it in 150 proof grain alcohol. I do not dry them out first

Therein lies your problem, they are rotting.  You have to dry them first.
