Depending on what temperature you cook a sugar solution to (which determines water content), the texture will come out anywhere from syrup to chewy taffy to hard candy like toffee or peanut brittle. I use table sugar but it's supposed to be better to use at least some corn syrup to prevent crystallization. With straight sugar, you can run into problems where the whole mix rapidly crystallizes if disturbed too much or if some undissolved crystals remain. With most candy types you don't want crystals to form. Fudge is one exception, you cook the solution to a syrup like consistency and then beat it to get tiny crystals to form.



I was just talking to the old lady and you've given us inspiration to make some candy this weekend.  Shooting for something comparable to gummies and hard sour candies.

The worst candy I have ever tried is Thrills. It's purple chiclet like gum that tastes like soap. I don't think that's what they intended originally, but they now market it that way.

Not sure if American fudge is the same as UK fudge...but oohh mammmy, I love that stuff, but can only eat a smol bit at a time because you can just smell diabetes off it lol.

I like it ok but it's not really my favorite candy with that flavor. The gummy candy in licorice allsorts is pretty good. There is a company that makes licorice "samesorts" that are all just that type of candy and not the other stuff in the mix that isn't that great.

Word.  The only thing black licorice flavored that I’ll do is drinking sambuca.  It doesn’t taste that great but at least you can catch a buzz with that stuff.
