Southern part of UT is magical, if you don't mind being stared with very judgmental looks by Mormon women.

Cedar City, St. George, Bryce, and Zion NP's. All just amazing. I'm guessing you usually come the SLC route, right? Great Basin is what it is. A great basin full of nothing.

I can literally see Utah from my backyard. Monticello, up to the La Salles where Moab is. Just incredible dude.

Yeah salt lake is not my idea of fun driving. All of Idaho is super boring and super stressful with the 80mph speed limit. Utah is really pretty heading east from salt lake toward steamboat. Then it easy street all the way till Buena Vista.
