ID help: Russula, King boletes, (false?) Chant, slippery jack

Hey everyone. I hope the pictures speak for themselves. I know the kings are small, but on my way in I saw a group that picks everything or kicks everything.

They were all found where fresh water dumps into the sea and floods brackish water. 47 degrees 35mph wind pouring rain the last 5 days.


The Russula (rosacea?) didn't have a sharp or "hot" taste. It's kind of good despite spitting it out.

Am I safe to cook these and eat them? There's nothing that stands out about them that makes me think poison. I didn't harvest those false chants.. I think.. growing in pine.

No.. I haven't eaten anything.. the only reason I really did is the Polish, Russian and Czech communities go out of their way to get these.. figured I'd pick and clean and check in here.

Why, no good? Just did the spit test on the russula is as far as ingestion goes.

I just want to confirm my ID's.

I didn't take the false chants. They are the fake ones right?

The other three are highly coveted by everyone who goes there so idk? Literally the edibles will just *poof*.. russula jacks and kings.. I've met 3 different sets of people now picking russula.

I cleaned the slippery jacks up and only one survived and had a white veil when I came home. 10 hours post picking the here's no point snagging these.

Are all my kings OK? I have a cold and want mushroom soup or something.

That looks like russula emetica, don't eat it.

I'm fine with tossing them but are they any good after parboiling to remove toxins?

Are those false chants?

Are my kings safe?

I tossed the slippery jack it turned to shit in a loose paper bag despite being a super pretty and clean specimen 6 hours and a bit of a drive earlier.

I was genuinely curious about the Russala. I too have read in several places that the rule of it not burning your toung as positive for edibility. Are the first two pics Boletes that you have already cleaned? If so, they appear to be white fleshed and white to cream pored. Pretty good indication they are edible. I don’t think you’re taking a huge risk if you tried a small amount of those Russala. Maybe someone will correct me tho.

Yeah I mean I've seen people with baskets full of them.. I read some articles in rusty Polish but my Cyrillic sucks, so no go on Russia. This Czech dude comes in and picks those and only those and goes fishing and crabbing with his family. Then again eastern euro, they got guts like rocks, and mushrooms occupy a lot of people's diets. Someone eats them and doesn't die. I'm guessing boiling hardcore in stew (most common dish) then sitting and cooking for hours kills toxins.

Thanks for info on boletes. Tips on removing the skin of the cap greatly appreciated. One of those I know I'm right but just to be sure and wife also complained I didn't ID here haha.

Don’t make a huge batch of stew out of those Russala. Not sure that your boiling the toxins out theory has any merit. I’m not even really saying you should eat them, but if you do start with a small amount fried in butter. Then see if your projectile vomiting or pissing diarrhea out your but the next day. Safety first!

It's not "my" theory. It's called parboiling, and all on the Internet on culinary and mushroom sites. What would anyone else pick them for.. literally I've seen people with baskets of them and just them, or ask if I've seen them. there's gotta be a way.

Sorry shitty mood. I think I'll pass on this one anyway. The people eating it and collecting it (and jacks) seem to be immigrants from Euro/East Euro, and grow up eating all kinds of mushrooms. Unless someone can weigh in on these further? Why would people eat something that would make them vomit and shit themselves, I guess is my question. I'm guessing the czech dude boils them then boil again with crabs and shellfish he collects.

i'm of czech descent on my dad's side; his mom emigrated to the US in around 1930.  grandma told of picking a red russula for the table back in her homeland.  they pickled 'em as they were wont to do with a lot of stuff such as cabbage and basically any other veggie.  idk if pickling does anything to 'toxins' or not, but i've eaten common red russulas out of curiosity--i don't make it a habit--after tasting to see if peppery. 

my rule of thumb for those basic red and white russulas, whether right or not, is no peppery taste = ok to eat.  i've had no ill effects but i've only eaten them a couple times in limited amounts and am on the other side of the country from you.  YMMV.

For the sake of information ITT, it appears they're r. emetica, but may very well be russula xerampelina. I don't make it a habit eating emetica. Xerampelina can sometimes make you feel shitty, too. It really is the definition of "choice". Depending on substrate, they can vary from red to maroon and purple hues. Err on the side of caution more towards purple but still run a taste test and spit it out. I've had purple peppery ones before that must have been emetica on a different substrate, or very very choice xerampelina.

Boletes can be eaten raw. They can be cut up and dried and reconstituted or used as a meat substitute. Fried with garlic and onions always works or omelets. Don't use cheese like provolone that wash away flavors. That pile of kings cut up would likely only fill a half pint jar 1/4 full. Use sparingly. You don't need a lot and they don't lose as much as people say.

Yes those are false chants. They are likely Hygrophoropsis aurantiaca.

I assume he was picking in the rain from the looks of it. Jacks are "ok". If the bottom is white you're good. Slight brown to ochre is alright, or if handled rough. It's hard to find good ones unless a big spot of rain comes and they fruit in the sun or otherwise shielded areas. They're not super good. I wouldn't buy them or go out of my way for them.
